This Fall Apple Salad is everything you love about fall! Crisp apples, goat cheese, and bacon are tossed with quinoa and greens for a wholesome lunch or side.
Cook quinoa according to package instructions and let cool.
Fry bacon until crisp. Place on a paper towel to absorb any excess grease. Let cool then crumble. Set aside. Save bacon grease from the pan for use in the salad dressing.
In a large bowl, combine spring mix, cooled quinoa, apples, goat cheese, crumbled bacon, pecans and cranberries. Mix.
Bacon Vinaigrette
In a small bowl, whisk together bacon grease, red wine vinegar, mustard, maple syrup and seasonings.
Drizzle the vinaigrette over the salad and toss to coat.
