    Ingredients

    Salad Ingredients:

    • 4 cups spring mix
    • ½ cup cooked quinoa
    • 4 slices bacon cooked & crumbled
    • 2 honeycrisp apples chopped
    • ¼ cup goat cheese
    • ¼ cup glazed pecans
    • ¼ cup dried cranberries

    Dressing Ingredients:

    • 2 Tablespoons bacon grease
    • 1 Tablespoons red wine vinegar
    • 1 Tablespoons Dijon mustard
    • 2 Tablespoons maple syrup
    • ¼ teaspoon salt
    • ¼ teaspoons black pepper

    Instructions

    Salad

    • Cook quinoa according to package instructions and let cool.
    • Fry bacon until crisp. Place on a paper towel to absorb any excess grease. Let cool then crumble. Set aside. Save bacon grease from the pan for use in the salad dressing.
    • In a large bowl, combine spring mix, cooled quinoa, apples, goat cheese, crumbled bacon, pecans and cranberries. Mix.

    Bacon Vinaigrette

    • In a small bowl, whisk together bacon grease, red wine vinegar, mustard, maple syrup and seasonings.
    • Drizzle the vinaigrette over the salad and toss to coat.
