An easy peach quick bread with fresh seasonal fruit that bakes up sweet, moist, and delicious. It’s like eating a fresh peach in bread form. Great for breakfast, snack, or dessert.
Preheat oven to 325°F. Grease a 8-½x4-½x2-inch loaf pan.
Place peaches and 3 tablespoons of sugar in a blender and puree until smooth. It should yield about 1 ⅛ cup peach puree.
In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon. Set aside.
In the large bowl of an electric mixer, combine the remaining ¾ cup sugar with shortening and cream well.
Continue beating while adding egg and vanilla extract.
Add peach puree then dry ingredients and mix until all ingredients are moistened.
Stir in nuts.
Spoon batter into prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted in center comes out clean.
Cool 10 minutes in the pan then turn out onto a wire rack and let cool completely.

FOR MUFFINS: Grease and flour a muffin pan. Divide batter equally between muffin cups, filling about ⅔ full. Preheat oven to 375°F and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
