    I love peach season and since moving to Georgia I enjoy it even more. The peaches are so sweet and always juicy that it's hard to stop eating them. But putting them into this peach bread was one of the smartest things I've done. It's amazing how much it tastes like a fresh peach.     1. Fill a 4-cup measuring cup, or microwave-safe bowl, with about 3 cups of water. Bring to a boil in the microwave. It takes about 4 minutes.
    2. Drop the peaches in for 20-30 seconds then scoop out with a spoon and place in a bowl of cold water.
    3. Make an x in the top with a knife then peel the skin right off. Easy peasy!

    1. Place sliced peeled peaches in a blender with 3 tablespoons of sugar. (removing the skin is optional)
    2. Blend until pureed.
    3. In a large bowl, combine shortening and sugar.
    4. Beat until mixed then add the egg.
    5. Beat again until smooth.
    6. Pour pureed peaches into wet ingredients and mix well.

    2. Stir in dry ingredients.
    3. Add pecans and vanilla extract.
    4. Combine until just moistened.

    Ingredients

    • 1 ½ cups sliced fresh peaches
    • ¾ cup + 3 Tablespoons granulated sugar
    • 1 cup all-purpose flour
    • ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ⅛ teaspoon salt
    • ½ teaspoon cinnamon
    • ¼ cup shortening
    • 1 egg
    • ½ teaspoon vanilla extract
    • 6 Tablespoons finely chopped pecans

    Instructions

    • Preheat oven to 325°F. Grease a 8-½x4-½x2-inch loaf pan.
    • Place peaches and 3 tablespoons of sugar in a blender and puree until smooth. It should yield about 1 ⅛ cup peach puree.
    • In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon. Set aside.
    • In the large bowl of an electric mixer, combine the remaining ¾ cup sugar with shortening and cream well.
    • Continue beating while adding egg and vanilla extract.
    • Add peach puree then dry ingredients and mix until all ingredients are moistened.
    • Stir in nuts.
    • Spoon batter into prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted in center comes out clean.
    • Cool 10 minutes in the pan then turn out onto a wire rack and let cool completely.

    Notes

    FOR MUFFINS: Grease and flour a muffin pan. Divide batter equally between muffin cups, filling about ⅔ full. Preheat oven to 375°F and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
