Ingredients
- 1 ½ cups sliced fresh peaches
- ¾ cup + 3 Tablespoons granulated sugar
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ½ teaspoon cinnamon
- ¼ cup shortening
- 1 egg
- ½ teaspoon vanilla extract
- 6 Tablespoons finely chopped pecans
Instructions
- Preheat oven to 325°F. Grease a 8-½x4-½x2-inch loaf pan.
- Place peaches and 3 tablespoons of sugar in a blender and puree until smooth. It should yield about 1 ⅛ cup peach puree.
- In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon. Set aside.
- In the large bowl of an electric mixer, combine the remaining ¾ cup sugar with shortening and cream well.
- Continue beating while adding egg and vanilla extract.
- Add peach puree then dry ingredients and mix until all ingredients are moistened.
- Stir in nuts.
- Spoon batter into prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted in center comes out clean.
- Cool 10 minutes in the pan then turn out onto a wire rack and let cool completely.
