Instant Pot Beef Tips and Gravy recipe is the perfect comfort food dinner. Tender beef in a rich, savory gravy that's perfect for busy weeknights or lazy weekends.
Add the oil and butter to the Instant Pot and press Sauté. Once hot, add ⅓ of the stew beef in a single layer and sprinkle with 1 teaspoon steak seasoning. Cook until seared, about 5 minutes, stirring once halfway through. Repeat 2 more times with remaining beef and seasoning. Add more oil if the pot becomes too dry.
Add all beef back into the pot. Toss in the onion and garlic, and sauté for 3 minutes, stirring occasionally.
Stir in the beef broth, Worcestershire sauce, and soy sauce.
Cancel the Sauté function. Lock the lid on and cook under high pressure for 30 minutes (maybe 35). Release pressure manually and remove lid.
Turn on the Sauté function and stir in the cornstarch mixed with ¼ cup water, then season with Italian seasoning and thyme. Continue cooking until the sauce is thickened, about 3 minutes, stirring frequently.
Serve over mashed potatoes or egg noodles.
