Servings: 15 -20 balls
Ingredients
- 1 cup old fashioned oats (Use gluten-free oats if needed)
- ⅔ cup toasted unsweetened coconut flakes*
- ½ cup fresh peanut butter
- ½ cup pecans, finely chopped
- 1 Tablespoon chia seeds
- ½ cup ground flax seed
- ¼ cup unsweetened cocoa powder
- 2 scoops Barlean’s Greens Chocolate Silk flavor
- ⅓ cup honey
- 1 teaspoon vanilla extract
Instructions
- Add all ingredients together in a medium bowl and mix well. I used my hands to make sure peanut butter was well distributed.
- Place in refrigerator for 30-45 minutes to make it easier to handle.
- Once chilled, use your hands to form balls. If dough is not wet enough to hold together just add a bit more peanut butter. If too wet, add more oats.
- Store in covered container in refrigerator.
Notes
Total time does not include the 30-45 minutes to chill dough to make it easier to handle.
*How to toast coconut: Preheat oven to 325 degrees. Spread unsweetened coconut flakes in a single layer on cookie sheet and bake for 5-10 minutes. Watch carefully so that it doesn’t burn.
