Garnish: pineapple wedges, lime slices, mint sprigs
Instructions
In a cocktail shaker, muddle mint leaves and lime juice.
Pour pineapple juice, coconut water, and rum over mint. Shake to mix.
When ready to serve, fill 2 tall glasses with ice and divide rum mixture evenly. Top each glass with ¼ cup sparkling water or club soda. Garnish with a pineapple wedge, lime slice, and a sprig of mint, if desired.
Note: If making a pitcher, add sparkling beverage just before serving.
