Pistachio-Crusted Mahi Mahi is a quick & easy weeknight dinner! Moist, flaky fish is covered with a crispy, nutty crust and ready in 30 minutes! Perfect for any occasion.
Preheat oven to 400F. Prepare a small cookie sheet by lining it with parchment paper.
Prepare the mahi by patting dry with paper towels and seasoning with salt and pepper. Place on cookie sheet.
Combine the lemon juice, oil, honey, and garlic in a small bowl. Brush the oil mixture over the top of the mahi.
For the crumb mixture, stir together panko crumbs, finely chopped pistachios, parmesan cheese, and lemon zest.
Place on top of the mahi mahi and pat lightly to help it adhere to the fish.
Bake for 15-20 minutes or until mahi flakes easily with a fork.
Serve garnished with lemon slices and chopped parsley.

STORE/REHEATStore: Store leftovers in an airtight container in the refrigerator for up to 2 days.Reheat: Place the mahi mahi in a 350°F oven for about 10 minutes, until warmed through. I would not recommend microwaving as it can make the fish rubbery.
