Pistachio Crusted Mahi Mahi
Ingredients
- 2 mahi mahi fillets about 6 ounces each
- 1 ½ teaspoons fresh lemon juice
- 1 teaspoon olive oil
- 1 teaspoon honey
- ¼ teaspoon minced garlic
- 2 Tablespoons panko crumbs
- ¼ cup pistachios chopped fine
- 1 Tablespoon grated Parmesan cheese
- 1 teaspoon lemon zest
- Garnish: parsley lemon slices
Instructions
- Preheat oven to 400F. Prepare a small cookie sheet by lining it with parchment paper.
- Prepare the mahi by patting dry with paper towels and seasoning with salt and pepper. Place on cookie sheet.
- Combine the lemon juice, oil, honey, and garlic in a small bowl. Brush the oil mixture over the top of the mahi.
- For the crumb mixture, stir together panko crumbs, finely chopped pistachios, parmesan cheese, and lemon zest.
- Place on top of the mahi mahi and pat lightly to help it adhere to the fish.
