Preheat oven to 500°F. Line one baking sheet with parchment paper.
Roll the pizza dough out into a rectangle that is 12" long and about 8" wide.
Using a pizza cutter, cut lengthwise into 4 strips. Roll the strips into a rope then cut into 1" pieces. You should have 32 pieces.
Bring a large stockpot on water to a boil. Make sure you have at least 4" free at the top for the effect of adding baking soda to the water.
Slowly add in the baking soda.
Add half the pizza bites to the boiling water and cook for 45-60 seconds. Remove with a slotted spoon to the prepared baking sheet. Sprinkle with coarse salt.
Repeat with remaining pizza bites.
Bake for 7-8 minutes or until golden brown.
When they are done and still warm, brush them with melted butter.
