2-Minute Sausage Egg Scramble
Don't skip breakfast! Whip up this easy 2-minute Sausage Egg Scramble! A mix of eggs, sausage & cheese, baked in the microwave, makes one delicious, healthy way to start the day. And it's low carb and keto friendly too!

Ingredients

breakfast sausage
cooked

Tablespoons
cheddar cheese
shredded
Salt & pepper
to taste
Instructions
Whisk 2 eggs in a large mug, season with salt & pepper.
Pop into the microwave and bake for about 40 seconds. (timing depends on wattage of your oven)
Add sausage and cheese, more or less to your liking. This would also be the time to add any other add-ins you would want. Stir well.
Return to microwave and bake an addition 30-40 seconds or until eggs are done to your satisfaction.
Notes
Ways to Change-Up This Quick & Easy Breakfast Scramble
Substitute bacon for the sausage or use your favorite Italian sausage in lieu of the breakfast variety.
Change out the cheddar cheese for smoked gouda, gruyere or maybe a spicier jalapeno jack.
Make it vegetarian by omitting the sausage and adding broccoli, spinach or kale.
Use eggs whites in place of whole eggs.
