I love breakfast! Sometimes I have time for it and love to whip up this Loaded Breakfast Skillet, and sometimes not, and opt for these awesome Street Breakfast Tacos.
But I have a confession to make. Lately, I’ve gotten hooked on those sausage egg scrambles that you can buy in the refrigerated section of the grocery store. They’re so convenient and easy to make that I may never skip breakfast again! Plus they provide me with plenty of protein and good carbs perfect for my low carb diet.
OK, here comes the but … they’re expensive to grab and go every day. So, I decided that I had to try to make them at home. After all, they’re only eggs, sausage or bacon and some cheese. Plus, I could add onions and peppers, spinach or anything else I wanted.
Did it work out? Oh, yes it did! All I had to do was cook up some breakfast sausage, grate some cheese and scramble some eggs. Put it in a mug and cook it following the directions, with some adjustment on the time, of my favorite store-bought scramble. Out comes a cheesy, moist and flavorful meal in a matter of seconds. Can't beat that for quick and easy!
Easy Steps to Make A Sausage Egg Scramble
- Gather the 3 ingredients - fresh eggs, cooked sausage and grated cheese. (photo 1)
- Whisk 2 eggs in a large mug, season with salt & pepper. (photo 2)
- Pop into the microwave and bake for about 40 seconds. (timing depends on wattage of your oven) (photo 3)
- Add your desired amount of sausage and cheese. (photo 4)
- Stir well. (photo 5)
- Return to microwave and bake an addition 30-40 seconds or until eggs are done to your satisfaction. (photo 6)
Ways to Change-Up This Quick & Easy Breakfast Scramble
- Substitute bacon for the sausage or use your favorite Italian sausage in lieu of the breakfast variety.
- Change out the cheddar cheese for smoked gouda, gruyere or maybe a spicier jalapeno jack.
- Make it vegetarian by omitting the sausage and adding broccoli, spinach or kale.
- Use eggs whites in place of whole eggs.
And there you have it! A delicious warm, tasty breakfast that takes just a few minutes to make, dirties only one mug (OK, and a fork) and provides you with energy for the day ahead. And you can carry the fixins' with you and pop this sausage egg scramble in the microwave at the office. Easy peasy!

2-Minute Sausage Egg Scramble
Ingredients
- 2 eggs
- 2 Tablespoons breakfast sausage cooked
- 2 Tablespoons cheddar cheese shredded
- Salt & pepper to taste
Instructions
- Whisk 2 eggs in a large mug, season with salt & pepper.
- Pop into the microwave and bake for about 40 seconds. (timing depends on wattage of your oven)
