Whip up this healthy Strawberry Chicken Salad with the help of rotisserie chicken & fresh seasonal strawberries. It's quick & easy and perfect for lunch or dinner.
1-½cupscooked chicken,chopped (I used a rotisserie chicken or you can use leftover chicken or turkey)
1 ½cupsfresh strawberries, sliced
1avocado,chopped
⅓cupfeta cheese, crumbled
⅓cupslivered almonds,candied (see note)
Poppy Seed Dressing
½cupolive oilor vegetable oil
¼cupwhite wine vinegaror champagne vinegar
¼cupgranulated sugaror honey
½teaspoondried mustardor 2 teaspoon Dijon mustard
1Tablespoonpoppy seeds
1teaspoonshallot, grated
½teaspoonsalt
2teaspoonsplain yogurtor mayonnaise
Instructions
Salad
Place the greens in a large bowl.
Add remaining ingredients and toss well.
Poppy Seed Dressing
Add all ingredients to a medium mixing bowl or a mason jar with a lid.
Shake well.
Lightly drizzle dressing over salad, either in the larger bowl or over individual servings. Serve additional dressing on the side.
Best served immediately after applying the dressing.
Notes
To candy almonds:Place 1 tablespoon brown sugar in a small skillet. Heat until sugar begins to melt, add almonds, and toss to coat. Cook until nuts are lightly toasted. Pour the nuts onto a greased cookie sheet or parchment paper and allow to cool. Once hardened, break into pieces.
