    Patriotic Red White and Blue Jello Salad

    A fresh, colorful Patriotic Red White and Blue Jello Salad that's perfect for any picnic or holiday. Strawberry jello, marshmallows, and cream cheese make a rich red bottom layer while blueberry jello brings blue to the mix. It’s finished with a white center of fluffy whipped cream and fresh berries.

    This layered jello salad was always present on my family’s table when I was growing up. Now that retro recipes are back, it only seems appropriate to dust off those jello molds and bring a little “new” old-fashioned deliciousness to the party.

    This patriotic red white and blue jello salad is similar in consistency to my Lime Fluff but is layered in lieu of mixing it all together. And it’s always a hit with little kids and big kids alike. After all, what kid doesn’t like jello?!

    This jello salad with cream cheese consists of a layer of strawberry jello sweetened with mini marshmallows and made creamier with cream cheese. The top layer brings the blue to the party with a “berry” jello that stands on its own. Believe me, this side dish has got the jiggle kids love and in all their favorite flavors.

    And with its patriotic colors, this red white and blue jello salad makes the perfect centerpiece for the Memorial Day or July 4th picnic table.

    Variations

    • You can make this with lime jello, cream cheese and pineapple for a bright sunny addition to your summer picnics.
    • For a fruitier salad, add blueberries to the top layer of berry jello.
    • Try substituting vanilla yogurt for the cream cheese for a boost of protein.
    • Get creative and try more than 2 layers, maybe lemon, lime and orange.

    How to Make Layered Jello Salad with Cream Cheese

    All you need are 6 ingredients to whip up this red white and blue jello salad. Strawberry and berry blue jello, cream cheese, mini marshmallows, strawberries, and Cool Whip or whipped cream.

    1. First prepare the berry blue jello by adding ¾ cup boiling water to the jello. Stir to dissolve.
    2. Next, to help with the quick set, add ½ cup cold water with enough ice in it to make 1-¼ cups. Stir until jello become syrupy.
    3. Pour into mold.
    4. Refrigerate for about 2 hours, or until firmly set.

    1. Prepare strawberry jello by pouring 1 cup boiling water over jello and stirring until dissolved.
    2. Add mini marshmallows and stir until they are all melted.
    3. Place bowl in refrigerator and let sit for about 30 minutes or until slightly syrupy.
    4. Whip cream cheese then add syrupy strawberry jello to it. Stir well.
    5. Fold in chopped strawberries and whipped cream.
    6. Remove blue jello from refrigerator and pour jello-cream cheese mixture over top. Return to refrigerator for at least 2 hours or until top is set.

    1. When jello salad has set, remove from refrigerator and place in a bowl of very warm water. Let sit for about 30 seconds being careful not to let water over the top of the mold.

    1. Place plate over the top of the hold and, holding tightly, invert jello salad onto plate. Now it's ready to be decorated however you want. I like to add whipped cream to the center and place sliced strawberries and blueberries on top.

    This patriotic red, white and blue jello salad comes out closer to a dessert than a side but why wait until the end of the meal when it tastes so good with all the other picnic fixins'. It really is the perfect centerpiece for your Memorial Day or July 4th barbecue. Enjoy!

    Ingredients

    • 1 small package berry blue jello
    • 1 small package strawberry jello
    • 1 cup mini-marshmallows
    • 4 oz cream cheese, room temperature
    • ½ cup Strawberries, chopped & additional for garnish
    • 1 cup whipped cream or cool whip

    Instructions

    • Prepare package of berry blue jello according to package directions for quick set. 
    • Pour into jello mold and place in refrigerator for approximately 2 hours or until firmly set.
    • Open package of strawberry jello and empty into medium bowl. Pour 1 cup boiling water over jello and mix until dissolved.
    • Add mini-marshmallows and stir until melted. 
    • Cool in bowl in refrigerator for about ½ to ¾ hour until jello is syrupy.
    • Whip cream cheese until smooth.
    • Pour syrupy jello mixture into cream cheese
    • Fold in chopped strawberries and whipped cream or Cool Whip.
    • Remove berry blue jello in mold from refrigerator and pour jello-cream cheese mixture on top.
    • Return to refrigerator until top mixture is firm.
    • To remove from mold, place mold in very warm water, being careful not to let water flow over top, for about 30 seconds. Place plate on top of mold and invert together.
    • When ready to serve, fill center with whipped cream or Cool Whip and decorate with strawberries and blueberries.
