Easy to customize - This pork chops and scalloped potatoes dinner can be made in so many ways that you could cook it for a week and not have the same flavors twice. Check out all the variations below and make this casserole your own.

    Ingredients

Here's what you need to make this pork chop potato onion casserole. The exact measurements are in the printable recipe card below.

    Pork chop casserole ingredients.
    • Boneless pork chops
    • Salt & pepper
    • All-purpose flour
    • Olive oil
    • Potatoes - Russet potatoes are the best for this casserole.
    • Large onion
    • Cream of mushroom soup or cream of chicken soup
    • Shredded cheddar cheese

    Ingredient Notes

Pork Chops - Use pork chops that are about ½-inch thick. Thicker ones will take longer to cook. You can use bone-in pork chops instead of boneless. Pork chops are done when the internal temperature is 145°F.

Potato - A starchy potato such as a Russet or Yukon Gold is best for this casserole.

Cheese - It's best to shred the cheese yourself instead. Pre-shredded cheese has anti-caking agents that prevent the cheese from melting smoothly.

How to Make Pork Chop and Potato Casserole

Here are the simple steps for making this pork chops & scalloped potatoes casserole:

Preparing pork chops prep steps 1-4.
    1. Gather the 6 simple ingredients plus seasoning for the casserole.
    2. Slice the potatoes and onions and season the pork chops with salt and pepper.
    3. Dredge the pork chops in a little flour to cover.
    4. Heat oil in a skillet and brown the floured pork chops on both sides.
    Assembly steps for layering casserole.
    1. Using half the sliced potatoes, line the bottom of the prepared baking dish.
    2. Place pork chops on top of potatoes. Ensure the casserole dish allows enough room to hold the pork chops without overlapping. This will allow them to cook evenly.
    3. Spread the remaining potatoes on top of the pork chops, followed by the sliced onions.
    4. Mix the soup with water.
    5. Pour the soup mixture over the casserole.
    6. Sprinkle with cheese and bake.

Tip: Like a little more spice? Add ½ teaspoon minced garlic while browning chops and/or ¼ teaspoon thyme, ¼ teaspoon sage, ¼ teaspoon rosemary, and ½ teaspoon garlic powder to the soup mixture.

    Recipe Variations

    • Save prep time and make the pork chop casserole with hash browns. Use a 20-ounce package of hash browns instead of sliced potatoes.
    • Replace the sliced onion with 1 cup of French fried onions.
    • Make a richer sauce by adding milk or cream instead of water.
    • Want to get some veggies into the casserole? Add a layer of chopped fresh spinach, broccoli, cauliflower, or green beans on top of the first layer of potatoes.
    • Are you someone who can never get enough bacon? Sprinkle some cooked and crumbled bacon over the layer of potatoes on the bottom.
    • Use cream of chicken or celery soup in place of cream of mushroom soup.
    • Changing out the cheese really changes the flavor of the entire dish. Try Gruyere, fontina, or mozzarella cheese in place of the cheddar.
    • Like a little more spice? Add ½ teaspoon minced garlic while browning chops and/or 1-2 teaspoons oregano, basil, or thyme to the soup mixture.

What to Serve With Pork Chop Casserole

Serve this Pork Chop Potato Casserole with a side of green beans to make a healthy, complete dinner. They would also pair well with sauteed apples, applesauce, bacon-wrapped carrots, and steamed broccoli.

    Make Ahead

Preparing your pork chop and potato casserole in advance can save time and reduce stress, especially if you're planning to serve it for a special occasion or a busy weeknight dinner. Here's how you can make it ahead:

    1. Follow the recipe up to the point of baking. Assemble the casserole in the baking dish as directed, layering the pork chops, potatoes, onions, and cream of mushroom soup mixture. Hold off on adding the cheese topping at this stage.
    2. Once assembled, cover the casserole dish tightly with plastic wrap or aluminum foil. It can be refrigerated for up to 24 hours before you plan to bake it.
    3. When you're ready to bake the casserole, remove it from the refrigerator. Let it sit at room temperature for about 20 minutes while you preheat your oven. Sprinkle the shredded cheese on top just before baking.
    4. Bake the casserole following the recipe's instructions, though you might need to add an extra 5-10 minutes to the baking time since it's starting from a cold state.

    How to Store Leftovers

Storing your casserole properly is key to keeping it fresh and tasty for later meals. Here's what to do:

    1. Cool Completely: Allow the casserole to cool to room temperature before storing. This prevents condensation which can make it soggy.
    2. Refrigerate: Transfer the cooled casserole to an airtight container or cover the baking dish tightly with plastic wrap or aluminum foil. It can be stored in the refrigerator for up to 3-4 days.
    3. Freeze: If you want to freeze the casserole, divide it into individual portions and place them in freezer-safe containers. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.

    How to Reheat

Reheating your casserole properly will help maintain its texture and flavor. Here's how to do it:

    1. Oven Reheating (Recommended): Preheat your oven to 350°F. Place the desired amount of casserole in an oven-safe dish and cover with aluminum foil. Reheat for about 20-25 minutes, or until heated through.
    2. Microwave Reheating: For a quicker option, you can reheat individual portions in the microwave. Place a serving on a microwave-safe plate, cover it with a microwave-safe lid or parchment paper, and heat on high for 1 to 2 minutes, or until heated through. Be aware that microwaving can change the texture of the potatoes and pork.

    Ingredients

    • 4 boneless pork chops
    • Salt & pepper
    • ¼ cup flour
    • 1 Tablespoon olive oil
    • 2-3 potatoes thinly sliced (a mandolin works great here)
    • ½ large onion thinly sliced (a mandolin works great here)
    • 1 can cream of mushroom soup or cream of chicken soup
    • 1 cup cheddar cheese shredded
    • 2 Tablespoons chopped fresh parsley optional garnish

    Instructions

    • Preheat oven to 375 degrees. Spray a 9x13-inch baking dish with a nonstick spray.
    • Season pork chops with salt and pepper.
    • Spread flour on a flat plate and dredge pork chops to cover well.
    • Heat a large skillet with olive oil over medium-high heat and brown pork chops on both sides.
    • Slice potatoes and onions thinly. I like to use a mandolin here as the slices are more uniform and the job goes much quicker.
    • Line the bottom of the baking dish with half of the sliced potatoes.
    • Place pork chops on top of potatoes in a single layer.
    • Top chops with remaining potatoes then spread sliced onion over them.
    • Mix cream of mushroom soup with ¾ can of water and pour over all ingredients.
    • Sprinkle shredded cheese on top.
    • Bake, uncovered, for 30-45 minutes.
    • Garnish with parsley.
