    Pork Chop Potato Casserole

    Pork Chop Potato Casserole is a creamy, cheesy, comfort food that's as easy to make as it is delicious to eat. Moist pork chops are cooked between soft, tender potatoes and onions then smothered in a creamy, cheesy mushroom sauce. With only fifteen minutes of prep, it's the perfect dinner for busy weeknights or lazy weekends.

    I'm such a huge pork chop fan but find it is one of the hardest meats to cook up tender and juicy. I have a few go-to recipes that turn out the most awesome pork chops, like  Air Fryer Pork Chops, Dump & Bake Pork Chop Casserole and now I'm adding these smothered pork chops with potatoes and onions to the list. 

    With only 15 minutes of prep including browning the pork chops in a skillet and slicing the potatoes and onions, you can have this layered cheesy casserole ready to pop into the oven. A great time to put up your feet, relax and sip on a glass of wine. I'm taking all the moments like that when I can!

    A beautiful casserole that the whole family will love. It's like scalloped potatoes and sauteed onions got together to put a smile on everyone's faces. And the pork chops come out so tender you can cut them with a fork.

    This pork chops and scalloped potatoes dinner can be made in so many ways that you could cook it for a week and not have the same flavors twice. Check out all the variations below and make this casserole your own.

    Variations

    • Save prep time by using a 20-oz package of hash browns in lieu of sliced potatoes. 
    • Replace the sliced onion with 1 cup of French fried onions.
    • Make a richer sauce by adding milk or cream instead of water.
    • Want to get some veggies into the casserole? Add a layer of chopped fresh spinach on top of the first layer of potatoes.
    • Are you someone that can never get enough bacon? Sprinkle some cooked and crumbled bacon over the layer of potatoes on the bottom.
    • Use cream of chicken or celery soup in place of cream of mushroom soup.
    • Changing out the cheese really changes the flavor of the entire dish. Try Gruyere, fontina, or mozzarella cheese in place of the cheddar.
    • Like a little more spice? Add ½ teaspoon minced garlic while browning chops and/or 1-2 teaspoons oregano, basil, or thyme to the soup mixture.

    How to make pork chops and scalloped potatoes casserole

    Preparing pork chops prep steps 1-4.

    1. Gather the 6 simple ingredients plus seasoning for the casserole.
    2. Slice the potatoes and onions and season the pork chops with salt and pepper.
    3. Dredge the pork chops in a little flour to cover.
    4. Heat oil in a skillet and brown floured pork chops on both sides.

    1. Using half the sliced potatoes, line the bottom of the prepared baking dish. 
    2. Place pork chops on top of potatoes. Make sure that the casserole dish allows enough room to hold the pork chops without overlapping. This will allow them to cook evenly.
    3. Spread remaining potatoes on top of chops, followed by the sliced onions.  
    4. Mix the soup with water. I used cream of chicken soup here but cream of mushroom or cream of celery soup works as well.
    5. Pour the soup over the casserole.
    6. Sprinkle with cheese and bake. Any cheese will work here so choose your favorite.

    I love to serve this Pork Chop Potato Casserole with a side of green beans to make a healthy, complete dinner. They would also pair well with sauteed apples, applesauce, bacon-wrapped carrots, and steamed broccoli. Enjoy!

    Ingredients

    • 4 boneless pork chops
    • Salt & pepper
    • ¼ cup flour
    • 1 Tablespoon olive oil
    • 2-3 potatoes thinly sliced (a mandolin works great here)
    • ½ large onion thinly sliced (a mandolin works great here)
    • 1 can cream of mushroom soup
    • 1 cup cheddar cheese shredded

    Instructions

    • Preheat oven to 375 degrees. Spray a 9x13-inch baking dish with a nonstick spray.
    • Season pork chops with salt and pepper.
    • Spread flour on a flat plate and dredge pork chops to cover well.
    • Heat a large skillet with olive oil over medium-high heat and brown pork chops on both sides.
    • Slice potatoes and onions thinly. I like to use a mandolin here as the slices are more uniform and the job goes much quicker.
    • Line the bottom of the baking dish with half of the sliced potatoes.
    • Place pork chops on top of potatoes in a single layer.
    • Top chops with remaining potatoes then spread sliced onion over them.
    • Mix cream of mushroom soup with ¾ can of water and pour over all ingredients.
    • Sprinkle shredded cheese on top.
    • Bake, uncovered, for 30-45 minutes.
    • Garnish with parsley.
