Who knew exchanging riced cauliflower for rice would be so delicious?! My daughter served a similar chicken and broccoli casserole for dinner last year and it totally floored me that it was cauliflower!
Of course, since then I've made any number of dishes where I've used cauliflower to lower the carb content and still put out a pretty awesome meal. Recipes like Instant Pot Honey Garlic Pork Tenderloin served over riced cauliflower, Dump and Bake Pork Chop Casserole loaded with cauliflower tots, and now this easy keto Chicken Broccoli Casserole. It's loaded with bacon, Gouda cheese, and garlic to pack in plenty of flavor. And it's healthy and filling too!
It's super simple to make and just the type of dinner I like to put on the table when the weather turns cold. You can use rotisserie chicken as shown in the recipe or, if you just happen to have some leftover turkey hanging around in your refrigerator, that will work too.

- In lieu of rotisserie chicken, leftover chicken or shredded chicken can be used.
- Change out the chicken for turkey, which is a great way to use up holiday turkey.
- Not into Gouda cheese? Try cheddar or gruyere instead.
- Bulk it up with even more veggies by adding mushrooms and, if you're forgoing meat, you can even leave out the chicken!
This easy keto chicken broccoli casserole recipe has just eight ingredients, including a store-bought rotisserie chicken and two frozen packaged vegetables. It can't get much easier than that! You can even make it ahead of time and store it in the refrigerator until ready to bake, just bring the casserole to room temperature prior to baking. - Cook riced cauliflower according to directions on the package. Brown bacon and crumble then sauté onions in bacon fat for about 5 minutes. (photo 1)
- Place all ingredients, cauliflower, broccoli, bacon, chicken, cheese, bacon, onions, and egg in a medium bowl. (photo 2)
- Toss them together. (photo 3)
- Pour into the prepared baking dish then sprinkle with grated parmesan cheese and bake. (photo 4)
- Bake until golden brown.

Keto Chicken Broccoli Casserole
Ingredients
- 6 pcs bacon cooked & crumbled
- 1 Tablespoon bacon fat
- ¼ cup onion diced
- 2 teaspoons minced garlic
- 1 Rotisserie Chicken or 2 cups leftover turkey
- 10 oz bag frozen riced cauliflower cook according to package directions
- 9 oz bag frozen broccoli florets cook according to package directions
- 1 egg
- 2 cups smoked gouda cheese shredded
- 1 teaspoon salt pepper to taste
- 1 cup Parmesan cheese grated
Instructions
- Preheat oven to 400 degrees. Spray a large casserole dish with nonstick cooking spray. Set aside.
- Cook bacon in a skillet until crisp. Remove from pan.
- Remove all but 1 tablespoon bacon fat from pan. Saute onions for about 5 minutes or until soft. During last minute, add minced garlic.
- In a large bowl, combine chicken, cooked cauliflower, cooked broccoli, bacon, onion-garlic mixture, shredded gouda cheese, egg, salt and pepper. Mix well.
- Pour into prepared casserole and sprinkle Parmesan cheese on top.
- Bake for 50 minutes or until top is brown and cheese has melted.
- Let set for 10 minutes to make serving easier.

It would be nice to know what pan size. Just for information of portion size. 8 servings of a 9” x 13” pan is large compared to a serving of an 8” x 8” pan 🙂

Sure thing! I used an 8x11-inch baking dish but it also works well with a 9x13" dish. Hope that helps.
