    This Chicken Apple Sausage Sheet Pan dinner is a quick and easy recipe for any night of the week. Just cut up ingredients, toss in olive oil and a little cajun seasoning, spread on a cookie sheet and bake. A delicious dinner in 30 minutes with almost zero clean-up!

    Easy Sausage Sheet Pan Dinner

    If you've never made a sheet pan dinner you'll be surprised at how easy and delicious they are. You can use just about anything you have in your cupboards or refrigerator like I did for my Sheet Pan Shrimp Boil or Sheet Pan Chicken and Veggies and dinner always seems to come out over-the-top yummy!

    So if you're looking for dinner in 30 tonight, this Sausage Sheet Pan Dinner is for you! It's a delicious combination of chicken & apple sausage, onions, sweet peppers, and apples tossed in a spicy cajun seasoning. I also tossed in a package of chorizo to up the spice factor and, if you're not watching your carbs, cut up a potato or two for a more filling meal.

    All in all, this sheet pan sausage and veggies dinner can't be beat! It's easy to throw together, you can add the ingredients your family prefers, and the best part is when it's all gobbled up you'll only have one cookie sheet to clean up. How great is that!

    It is a link sausage made with ground chicken, apple, and seasonings. It is usually fully cooked and sometimes smoked with apple wood.

    • Chicken Apple Sausage - I like Aidells brand but Trader Joe and Whole Foods also carry a delicious chicken sausage. You can also opt for turkey sausage, Italian sausage, or kielbasa.
    • Chorizo Sausage - adds the spice to the mix. Change it up for andouille for a little milder spiciness.
    • Sweet Onion - roasts up even sweeter and lends a slight onion flavor to the dish
    • Red and Green Bell Peppers - roasting bell peppers deepens their flavor and gives the dinner a healthy punch
    • Apples - adds additional sweetness and amplifies the apple flavor in the sausage.
    • Potatoes - totally optional but adds some heartiness or exchange for sweet potatoes. Omit for keto and low-carb diets.
    • Olive Oil - aids in browning the ingredients and keeping them moist.
    • Cajun Seasoning - gives all the veggies and sausage a nice spicy kick.

    1. Cut up all ingredients and place them on a sheet pan.

    • Use a large sheet pan. It will give room between the sausage and veggies. They roast better this way.
    • Line the pan. For easy cleanup, line the pan with aluminum foil (non-stick foil is great!) or parchment paper.
    • Use seasonal vegetables. Root vegetables take longer to cook so other veggies may need to be added later in the baking process.
    • Make it cheesy. Sprinkle on a little grated Parmesan cheese in the last 5 minutes.
    • Prep Ahead. Chop the vegetables a day or two in advance and keep them in zip-top bags in the fridge. Or buy pre-chopped veggies.

    In the microwave: Place the sausage and veggies on a microwave-safe plate. Microwave on high for 1 minute.

    Ingredients

    • 1 pkg Chicken Apple Sausage, thickly sliced (about 12 oz)
    • 1 pkg Chorizo (about 6.5 oz)
    • 1 medium sweet onion, cut in wedges
    • 1 medium sweet red bell pepper, cut in strips
    • 1 medium green bell pepper, cut in strips
    • 2 apples, cut in wedges
    • 2 medium potatoes, cut into chunks (optional)
    • 2 Tablespoons olive oil
    • 1-2 teaspoons Cajun seasoning

    Instructions

    • Preheat oven to 400 degrees. Spray a rimmed cookie sheet with nonstick spray.
    • Place cut-up sausage, chorizo, onion, peppers, apple and potatoes, if using, on cookie sheet.
    • Sprinkle with olive oil and Cajun seasoning and toss with hands until all is well coated.
    • Place in oven and bake for 30 minutes.

      This came out wonderful! I didn’t have chorizo, so omitted it, but did add carrots along with everything else mentioned. Thanks so much for the recipe!
