Make these cute individual meatloaf cupcakes baked in a muffin pan & topped with creamy whipped potatoes. Dinner's on the table quicker & there's sure to be plenty of smiles when served.

I love to cook and I love being able to get creative in the plated presentation. Of course, the only time I get to do that is if I plan it in advance and have everything ready to go so that I can still get it to the table on time. That doesn't happen as often as I'd like but, when it does, it brings smiles out all around.

I've managed to have fun skewering soft chicken tacos and creating a handheld version of lasagna, which, by the way, work great for parties as do these cute little meatloaf cupcakes on my post today. And, let me tell you, they didn't only look cute but tasted delicious too! Modest, aren't I? 🙂

And you want to know the best part? They are super easy to make and fun too! They are great for dinner but are also perfect for your big Super Bowl party coming up this weekend. You can prepare the meatloaf cupcakes a little ahead of time and just keep them warm in the oven. I like to serve barbecue sauce, ketchup and some crisp french fries on the side. Doesn't that sound sooo good?! It's hard to wait for the weekend to test these little babies out. OK, why wait, try them now and make them again for the weekend. 🙂 Hope you enjoy!

Mini Meatloaf Sheet Pan Dinner with Roasted Potatoes
Ingredients
Mini Meatloaves
- 1 ½ lbs. ground beef
- ⅓ cup Italian bread crumbs or use oats for a healthier option
- ½ cup onions chopped
- 1 cup BBQ sauce or ketchup divided
- 1 egg
- 1 teaspoon Worcestershire sauce
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1 teaspoon coarse sea salt
- ½ teaspoon black pepper
- ¼ cup Parmesan cheese
Veggies
- 1 pound potatoes cut into bite-sized pieces
- 1 pound green beans washed & trimmed
- 2 Tablespoons olive oil
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F.
Veggies
- Place cut potatoes on sheet pan and toss with 1 tablespoon oil and season with salt and pepper. Spread them out and make sure they are in a single layer.
- Bake in oven for 10 minutes before adding meatloaves and green beans to sheet pan.
Mini Meatloaves
- Mix ground beef, bread crumbs, onion, ½ cup BBQ sauce, egg, Worcestershire sauce, garlic, Italian seasoning, salt, pepper, and Parmesan cheese in large bowl. Do not overmix or they can become tough.
- Divide meatloaf mixture into 6 mini meatloaves. Place on sheet pan around potatoes. Brush with the remaining ½ cup of BBQ sauce.
- Toss green beans in a bowl with 1 tablespoon oil. Season with salt and pepper. Scatter around meatloaves and potatoes.
- Bake for 20-25 minutes or until potatoes are tender and meatloaves have reached an internal temperature of 160°F.

Those are so cute! I love cupcakes and using the potatoes as frosting. It would be a hoot to make them in cupcake paper and not tell people they were savory 😉 I'm mean though, apparently!
