Air Fryer Breakfast Taquitos

Ingredients
- 6 ounces breakfast sausage or Italian sausage (5-6 slices of bacon can be subbed for the sausage)
- 4 large eggs
- Salt and pepper to taste
- 1 ½-2 cups cheddar cheese shredded (depending on how cheesy you like yout taquitos)
- 1 avocado diced
- 8-10 corn tortillas or use 6" flour tortillas
- Garnish: diced avocado, salsa, sour cream, chopped lettuce and tomatoes
Instructions
- Cook the sausage in a medium skillet, crumbling as you go, until done.
- Whisk the eggs in a medium bowl then salt and pepper to taste.
- Scramble the eggs in a skillet with a little bacon fat or oil. Leave the eggs a little moist as they will cook further in the air fryer.
- Warm tortillas for 1 minute in the microwave to soften.
- Fill the tortillas with the eggs and sausage.
- Sprinkle each with some cheese and a little of the diced avocado.
- Roll the tortillas from one side into a tight log. Repeat with remaining tortillas. Secure them with a toothpick to keep them from unrolling.
- Spray the basket of an air fryer with cooking oil spray. Lay the taquitos in the bottom spacing them out so they cook evenly. You may have to do them in batches depending on the size of your air fryer. Spray the tops of the taquitos with cooking spray.
- Air fry at 390°F for 5 minutes, turn over, spray tops with oil, and cook another 2-3 minutes or until they are crispy.
- Serve hot with garnishes of avocado, salsa, chopped lettuce, chopped tomatoes, and sour cream.
