    Easy Baked Huevos Rancheros with Sausage

    Baked Huevos Rancheros with sausage is a hearty egg and sausage breakfast topped with cheese and tortilla chips. It's easy to make with five simple ingredients and clean  up is a breeze. Serve it in individual ramekins or as a family style casserole. Perfect for any day of the week and special enough for holidays.

    I can't believe Christmas is less than a week away! I'm so excited and can't wait to be with the family. One of the things I always make sure I have is an easy breakfast recipe that will give all the kids (and big kids alike) plenty of energy for the round of gift unwrapping. It's usually a frenzy of activity that I never get tired of. These easy baked Huevos Rancheros are made in individual serving ramekins and baked up in the oven all at the same time. Plus they use ingredients you probably already have in your pantry.

    Now, you're probably wondering, what in the world is Huevos Rancheros. In English, it means Ranch Eggs and is usually comprised of fried eggs served with corn tortillas and covered with salsa. This version is easy to make ahead of time and simple to adapt to larger crowds.  You can cook the sausage up, grate the cheese and crush the tortillas all in advance. Then it is just a matter of stacking it all in ramekins and cracking the egg on top then bake.

    My ramekins were small and fit only one egg, so I actually served two per person. Although, I have to admit, they were pretty filling, so one might be plenty if you don't have a large appetite. You can also opt to make this as a family-style casserole and scoop each portion out with an egg.

    Variations

    • Make these easy huevos rancheros into a hearty vegetarian dish by omitting the sausage and adding refried black beans and garnishing with chopped avocado.
    • Only like scrambled eggs? Just whipped the eggs and top the sausage with the scrambled version and bake as usual.
    • Change out the sausage for even spicier chorizo. Oh, it's so good!
    • Like it less spicy? Sub cheddar, Monterey Jack or cotija cheese for the Pepper Jack.

    How to make this easy Mexican breakfast

    Prep steps for easy huevos rancheros.

    1. Gather the 5 simple ingredients - Rotel or similar salsa to use in lieu of the ranchero sauce, breakfast sausage, eggs, shredded cheese and tortilla chips. (photo 1)
    2. Place the Rotel in the bottom of the ramekins. Spread it out evenly. (photo 2)
    3. Place a portion of the breakfast sausage on the tomato base. You can use any type of sausage or even chorizo for a spicier version. (photo 3)
    4. Make a well in the center and crack at egg over the sausage. The well will help hold the yolk in the center. (photo 4)
    5. Sprinkle with cheese. (photo 5)
    6. Finish with crushed corn tortillas and bake.  (photo 6)

    These Baked Huevos Rancheros with sausage are always popular at the breakfast table in our house. I like to serve mine with extra chips, salsa, a sprinkling of cilantro and some chopped avocado. It's also great with sides of refried black beans, guacamole, avocado crema and Spanish rice. Whatever way you serve them, they are one deliciously filling meal. Enjoy!

    Ingredients

    • 8 oz Rotel Diced Tomatoes & Green Chiles about ½ can
    • ½ cup breakfast sausage or chorizo cooked & crumbled (about 4-oz)
    • 4 eggs
    • Salt & pepper to taste
    • ½ cup pepper jack cheese or Monterey Jack for a milder flavor
    • Tortilla chips crushed
    • Garnish: chopped cilantro

    Instructions

    • Preheat oven to 400 degrees.
    • Spray 4 ramekins with nonstick spray and place on foil-lined cookie sheet.
    • Spoon Rotel evenly between ramekins.
    • Sprinkle cooked sausage over tomato mixture.
    • Make a slight well in the center of the sausage-tomato mixture. Crack egg into it being careful to preserve yolk.
    • Sprinkle tops with cheese then with crumbled tortilla chips.
    • Bake for 15 minutes for soft yolks and slightly longer for cooked-through yolks.
    • Remove from oven and garnish with chopped cilantro. Serve hot.
