    Mexican Breakfast Street Tacos

    Breakfast never tasted so good! Simple and easy, these Mexican Breakfast Street Tacos are comprised of small corn tortillas filled with all your morning favorites. Bacon and eggs combine with Mexican ingredients like refried beans, guacamole, and cheese to make a quick, filling, low-carb, gluten-free breakfast. Great for on-the-go or a fun "make your own" taco bar.

    I never get tired of tacos! I think I could eat them every day and still want more. Plus they're perfect for breakfast, lunch, dinner, or even an appetizer or snack. And there are so many different ways to fix them.

    Options abound, from Slow Cooker Chicken Tacos to Korean Pork Tacos to Grilled Fish Tacos. Today, I'm bringing you something a little different - street tacos. These little bites of heaven, smaller than your normal taco, are sold by Mexican street vendors for an eat-as-you-go meal. And, if you've never tried them, you are in for a real treat!

    Mexican Breakfast Tacos for a Quick On-The-Go Meal

    Normally street tacos are a lunch or dinner meal with grilled meat but I decided it was high time to make a breakfast version. Now, I love my breakfast burritos but this taco, with its smaller corn tortilla, is a much healthier meal.

    It's quick, delicious, and delivers all the flavor of the larger burrito. Of course, you'll probably opt for 3 or 4 of these babies just 'cause they are soooooo delicious.

    All you need are your normal breakfast ingredients, like eggs and bacon, with some Mexican favorites like refried beans, guacamole, and salsa. Not only are these a make-them-your-way breakfast but totally adaptable to your diet.

    Breakfast Tacos Ideas

    • Chorizo Breakfast Tacos - brown fresh Mexican chorizo and use instead of or in addition to the bacon.
    • Potato & Egg Tacos - add hash browns or home fries
    • Sweet Potato Breakfast Tacos - add cooked sweet potatoes
    • Beans - change out the refried beans for black beans or charro beans.
    • Cheese - opt for cotija or Oaxaca cheese, feta or even goat cheese instead of cheddar
    • Steak & Egg Tacos - eliminate the bacon and add grilled sliced steak or brisket
    • Chicken or Shrimp Breakfast Tacos - add rotisserie or grilled chicken or cooked shrimp
    • Vegetarian Taco - opt for tofu or mushrooms in place of meat and an egg substitute
    • Really bring it up a notch by piling on the sour cream if you're not watching your diet.

    Favorite Questions About Mexican Street Tacos

    What is a street taco?

    Street Tacos are slightly different than our American Tacos in that they are made with small soft corn tortillas, instead of the larger crispy variety.

    They also usually double up on the tortilla as the filling of grilled or pan-fried chicken, beef, or pork tends to be wetter and can leak through the first tortilla.

    Are breakfast tacos healthy?

    Yes, these particular tacos are fairly low in calories. Street taco tortillas are small and are filled with just a small amount of bacon and cheese on them and finished with healthier ingredients like eggs, avocado, and beans. 3 to 4 tacos are usually sufficient and it helps to leave off that additional tortilla.

    What is the best type of tortilla to have if watching calories?

    Stick with a corn tortilla, which is generally smaller than their counterparts, for fewer calories, higher fiber count, and a variety of vitamins and minerals. Next would be whole wheat tortillas, which contain the least fat, and finally a plain flour tortilla.

    Corn Tortillas - these smaller tortillas are the perfect size for breakfast plus they are naturally gluten-free and lower carb than their flour cousin

    Bacon - adds crunch, protein, and flavor to the mix (for all my fellow bacon-lovers)

    Eggs - scrambled up with a little cream for a light fluffy addition

    Guacamole - lends a healthy monosaturated fat to the mix as well as fiber, folate, and potassium (you can also just spread a ripe avocado on top)

    Refried Beans - a great addition to help satiety as well as adding protein and fiber

    Cheddar Cheese - adds a sharp flavor but milder cheeses like cotija or goat cheese also work

    Garnishes - any and all will add flavor to these tacos. Try salsa, fresh cilantro, avocado, slices of lime, and sour cream

    How to Make Breakfast Tacos

    1. Brown street taco tortillas in a dry skillet then spread with a thin layer of guacamole. (photo 1)
    2. Spread beans on top of the guacamole. They can be refried beans, black beans, or charro beans. (photo 2)
    3. Divide eggs evenly between the tortillas. (photo 3)
    4. Sprinkle with crumbled bacon. (photo 4)
    5. Garnish with cheese. (photo 5)
    6. Finish with a dollop of salsa. (photo 6)

    Now scarf a few of these delicious small tacos and you'll wonder why you waited so long to make them. They are filled with protein, healthy fats, and vitamins to give you a head start on the day.

    Street Tacos for Easy Meal Prep

    For busy mornings, I like to prepare the ingredients ahead of time, including cooking the bacon and storing them in the fridge. Then, come morning, all I have to do is scramble the eggs, pile it all on the tortilla, and run out the door.

    Ingredients

    • 9 small corn street taco tortillas
    • 3 eggs scrambled
    • 4 pcs bacon cooked and crumbled (chorizo could be subbed as well)
    • ¼ cup refried beans, black beans or charro beans
    • ¼-1/3 cup guacamole or sliced avocado
    • ⅓ cup Cheddar cheese shredded
    • Garnishes: guacamole salsa, fresh cilantro

    Instructions

    • Cook bacon then set aside to drain on a paper towel. Crumble.
    • Scramble the eggs in a bit of the bacon fat.
    • Brown street taco tortillas in a dry skillet or over a gas flame.
    • Spread warm tortillas with a thin layer of guacamole or mashed avocado followed by refried beans.
    • Divide eggs evenly between the tortillas then sprinkle with crumbled bacon.
    • Garnish with cheese, a dollop of salsa and some fresh cilantro.
