    How to Make Salmon Cobb Salad

    This grilled salmon salad comes together easily with a few simple steps. Here's what to do:

    To grill salmon:

    Prepping and grilling salmon.
    1. Brush salmon with a little bacon fat or olive oil then season with salt and pepper.
    2. Preheat the grill to high. Spray the grill grates with oil. Place the salmon flesh side down, if grilling with skin, directly on the grill and cook 4-5 minutes. Turn over and cook for 3-4 minutes, depending on thickness. See below for directions on how to air fry or bake the salmon.

    Assembling salad:

    Prep salad by making rows of ingredients on top of greens.
    1. Place greens or lettuce in a large bowl. Arrange ingredients, cooked and crumbled bacon, chopped avocados, chopped tomatoes, hard boiled eggs, cut in quarters, feta cheese, sliced green onions, and bite-sized pieces of grilled salmon, in rows over the greens.

    Making white wine vinaigrette:

    Steps to make vinaigrette.
    1. In a jar with a screw-top or a large bowl, combine olive oil, white wine vinegar, honey, minced garlic, lemon juice, chopped basil, salt, and pepper.
    2. Shake the jar or whisk the ingredients in the bowl until well blended.

    If you don't have a grill, you can easily air fry or bake the salmon instead. To air fry, preheat fryer to 380°F. Spray bottom of basket with oil spray, season salmon with salt & pepper, then place in basket. Spray top of fish with oil spray and air fry for 8-10 minutes. For baking, place salmon on a baking sheet and bake at 400°F for 10 to 15 minutes, or until it flakes easily with a fork.

    Ingredients

    • 6 slices bacon cooked & chopped
    • 8 cups crisp greens, iceberg or romaine lettuce
    • 4 hard boiled eggs, quartered
    • 2 avocados, chopped
    • 3 medium tomatoes, chopped or 8 ounces cherry tomatoes, halved
    • 6 ounces feta (bleu cheese or gorgonzola can be substituted)
    • 1 pound salmon grilled, air fried or baked & cut into bite-sized pieces
    • 2 Tablespoons green onions, sliced thin

    White Wine Vinaigrette

    • ⅔ cup light olive oil
    • ¼ cup white wine vinegar
    • 2 Tablespoons honey
    • 2 teaspoons minced garlic
    • 2 Tablespoons fresh lemon juice
    • 1 Tablespoon fresh basil, finely chopped
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions

    • Cook bacon in skillet. Remove to paper towel to drain. Crumble or chop when cool.

    How to Grill Salmon (see above for instructions on how to air fry or bake)

    • While assembling salad, grill salmon. Brush salmon with some of the bacon fat or olive oil and season with a little salt and pepper.
    • Preheat grill to high. Place salmon, flesh side down if grilling with skin, directly on grill and cook for 4-5 minutes, turn and cook an additional 3-4 minutes, depending on thickness. Remove skin before cutting into pieces.

    Assembling Salad

    • In a large bowl, arrange ingredients in rows on top of greens.

    White Wine Vinaigrette

    • Place all ingredients in a jar with a lid and shake well. Drizzle over whole salad or, if you prefer, individual salads, just before serving.
