    Ingredients

    For Sandwich

    • 4 thick slices sourdough focaccia, or white mountain bread
    • 1 clove garlic optional
    • 6 pieces bacon - option to use pepper coated bacon or jalapeno bacon
    • 2 large slices tomatoes
    • 1 avocado, sliced
    • arugula

    Jalapeno Mayo

    • ½ cup mayonnaise
    • 2 jalapeno peppers minced
    • 1 clove garlic minced
    • 2 teaspoons lime juice
    • 2 Tablespoons cilantro chopped (parsley can be subbed)
    • ⅛ teaspoon salt
    • ⅛ teaspoon pepper

    Instructions

    For mayo

    • Add all ingredients to a blender or food processor and blend until smooth. You can also use an immersion blender.

    For Sandwich

    • Toast bread and, if using, rub a garlic clove on top.
    • Place 2 slices on plate, garlic rubbed side down and spread with jalapeno mayonnaise. (You will have some leftover.)
    • Top with 3 slices of cooked bacon, 1 slice tomato, ½ sliced avocado and a pile of arugula. Top with remaining bread slices, cut in half and enjoy.
