Spicy BLT with avocado
Ingredients
For Sandwich
- 4 thick slices sourdough focaccia, or white mountain bread
- 1 clove garlic optional
- 6 pieces bacon - option to use pepper coated bacon or jalapeno bacon
- 2 large slices tomatoes
- 1 avocado, sliced
- arugula
Jalapeno Mayo
- ½ cup mayonnaise
- 2 jalapeno peppers minced
- 1 clove garlic minced
- 2 teaspoons lime juice
- 2 Tablespoons cilantro chopped (parsley can be subbed)
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Instructions
For mayo
- Add all ingredients to a blender or food processor and blend until smooth. You can also use an immersion blender.
For Sandwich
- Toast bread and, if using, rub a garlic clove on top.
- Place 2 slices on plate, garlic rubbed side down and spread with jalapeno mayonnaise. (You will have some leftover.)
- Top with 3 slices of cooked bacon, 1 slice tomato, ½ sliced avocado and a pile of arugula. Top with remaining bread slices, cut in half and enjoy.
