    1. Line a cookie sheet with parchment paper or foil. Place graham crackers on sheet with sides touching. Cover evenly with marshmallows. Note that they will not take up the entire cookie sheet.
    2. Place butter, brown sugar, and cinnamon in a medium saucepan. Heat over medium heat, stirring often, until sugar has dissolved. It should take about 5 minutes.
    3. Remove from heat and stir in vanilla extract.
    4. Pour evenly over graham crackers and marshmallows.
    5. Sprinkle on almonds.
    6. Sprinkle on sweetened coconut.

    Ingredients

    • 12 graham crackers 4-¾ x 2-½
    • 2 cups mini marshmallows
    • ¾ cup butter
    • ¾ cup light brown sugar packed
    • 1 teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • 1 cup sliced almonds
    • 1 cup flaked sweetened coconut

    Instructions

    • Preheat oven to 350°F. Line a cookie sheet with parchment paper or foil.
    • Place graham crackers in a single layer in prepared pan and sprinkle mini marshmallows on top.
    • In a medium saucepan, combine butter, sugar, and cinnamon and cook, stirring often, until sugar has dissolved, about 5 minutes.
    • Remove from heat and stir in vanilla extract.
    • Pour over the marshmallows, making sure to cover the graham crackers, then sprinkle the top with almonds and coconut.
    • Bake for 15 minutes.
    • Let cool on the cookie sheet completely. Slide off and place on cutting board. Using a sharp knife, cut into 3" squares and halve each one into triangles.
