Usually it is something sweet like these Christmas Cinnamon Rolls or maybe just an extra special French Toast or quiche. We've been doing this for as many years as I can remember and everyone looks forward to this time of quiet before the frenzy of unwrapping begins.

    Some of my favorites are Cinnamon Roll French Toast, Chocolate Belgian Waffles, and Maple Pecan Sticky Buns.

    For these gingerbread cinnamon rolls, each ingredient brings something special to the mix. Here's what you'll need for the sweet bread and gingerbread filling:

    Sweet Bread Dough: The base of these rolls is made with milk, butter, flour, sugar, yeast, salt, and an egg yolk. Together, they create a dough that's light and fluffy with a soft, tender crumb that complements the spiced filling.

    Gingerbread Filling: Brown sugar, butter, molasses, and warming spices like ginger, cinnamon, nutmeg, and cloves make this filling a spiced, sweet addition that really sets the stage for Christmas.

    How to make gingerbread cinnamon rolls

    Don't stress! This may look like a lot of steps but they are each simple in their own right. Don't be afraid to tackle these gingerbread cinnamon rolls as they are much easier than they look. Now take a look and you'll find that this is the easiest sweet bread dough you've ever made.

    How to make sweet bread dough for cinnamon rolls.
    1. Place bread flour, sugar, rapid rise yeast and salt in a large mixing bowl of an electric mixer. Stir.
    2. Warm milk and butter in a microwave-safe bowl in the microwave to a temperature between 125°F-130°F. It usually takes 1 to 1-½ minutes. Add to dry ingredients and stir with a wooden spoon until all ingredients are moistened. NOTE: If it reaches a higher temperature just let it cool slightly. Too hot will kill the yeast and too cool won't activate it. Using a digital thermometer can take all the guess work out.
    3. Add egg yolk and stir.
    4. Knead in the bowl of a stand mixer with a dough hook attachment for 2-4 minutes at medium speed (speed 2 on a KitchenAid) or until dough become smooth and elastic and forms a ball. The dough will begin to pull away from the sides of the bowl. If the dough feels sticky to the touch after 2 minutes, add more flour slowly, up to ¼ cup, and continue kneading for another minute. Cover and let rest 10 minutes.

    While the dough is resting prepare the gingerbread filling.

    1. In a small bowl, combine molasses, brown sugar and spices.
    2. Add softened butter and mix until it forms a smooth paste.

    Now to assemble these sweet cinnamon rolls and dress them up for Christmas.

    1. Using a rolling pin, roll the bread dough on a lightly floured surface into a large rectangle, about 15"x10".
    2. Spread the filling over the dough all the way to the edges.
    3. Starting on the long edge, roll the dough up tightly.
    4. Using a serrated knife or unflavored dental floss, cut the log into 12 equal pieces.
    5. Place the slices, cut sides up in a 13x9" greased pan. You can also place a piece of parchment paper on the bottom to help with cleanup if some of the filling overflows.
    6. Cover and let the dough rise in a warm place until doubled in volume and the top does not spring back but leaves a slight indent when lightly touched. It usually takes about 2 hours.
    Baked rolls.
    1. Bake in a preheated 350°F oven for 25-30 minutes or until golden brown on top. When done, remove from oven to a wire rack and let cool for 10 minutes.

    Sweet Bread Dough

    • 1 cup milk
    • ¼ cup butter
    • 3 cups bread flour + additional ¼ cup if needed
    • ⅜ cup sugar
    • 1 packet RAPID RISE yeast
    • ½ teaspoon salt
    • 1 egg yolk

    Gingerbread Filling

    • ⅓ cup brown sugar
    • 2 Tablespoons molasses
    • 2 teaspoons ground ginger
    • 1 ½ teaspoons ground cinnamon
    • ¼ teaspoon nutmeg
    • ⅛ teaspoons ground cloves
    • 4 Tablespoons butter room temperature

    Cream Cheese Frosting

    • 4 ounces cream cheese room temperature
    • ¼ cup butter room temperature
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract

    Instructions

    Sweet Bread dough

    • In a microwave-safe measuring cup or bowl, warm milk and butter in the microwave for 30-60 seconds or until the butter is melted and the temperature measures between 125-130°F.
    • In a large mixing bowl of an electric mixer, stir together 3 cups flour, sugar, yeast and salt.
    • Make a well and pour warm milk-butter mixture into the dry mixture. Stir to combine.
    • Add whisked eggs to dough and stir.
    • Knead with electric mixer (speed 2 on a KitchenAid) for about 2-4 minutes to develop gluten and form a dough. If the dough feels sticky to the touch after 2 minutes, add more flour slowly, up to ¼ cup, and continue kneading for another minute.
    • Cover with towel and let rest for 10 minutes.

    Gingerbread Filling

    • For the filling, combine the brown sugar, molasses and spices in a small bowl. Stir in soft, room-temperature butter until a smooth paste is formed.

    Assembling the rolls

    • Grease a 13x9-inch baking dish. Set aside.
    • Roll dough into a 15 x 10-inch rectangle using a rolling pin. Spread the filling over the dough, right to the edges.
    • Beginning at the long end of the rectangle, roll up tightly. Pinch seams to seal.
    • Cut into 12 equal pieces using a very sharp, serrated knife. Place, cut sides down, in the prepared baking pan.
    • Cover with a towel and let rise in a warm place until it has doubled in size, for approximately 2 hours. It is done rising when the top does not spring back when lightly touched.
    • Preheat oven to 350°F.
    • Bake for 25-30 minutes or until rolls are golden brown. Cool on a wire rack for 10 minutes.

    Cream Cheese Frosting

    • Combine all frosting ingredients in a large bowl and mix together until light and fluffy and no streaks of powdered sugar remain, about 2-3 minutes. (If the frosting is a little too liquidy, add a bit more powdered sugar.)
    • Frost the gingerbread cinnamon rolls while they're still warm. Best served straight out of the oven!

    Notes

    FREEZE/STORE
