    Peanut Butter Banana Cookies

    These Peanut Butter Banana Cookies take the concept of combining peanut butter and banana to a whole new level. Rich banana bread-like cookies are chock full of peanut butter chips then drizzled with dark chocolate. Oh mercy, you won't want to stop eating them!

    When I’m looking for easy cookies to whip up in a hurry, drop cookies are always my go-to. And these Peanut Butter Banana Cookies were a no-brainer for me since one of my favorite combos has always been peanut butter and banana.

    What is a drop cookie?

    A drop cookie is exactly what it sounds like. It is a cookie you make by dropping spoonfuls of cookie dough onto a baking sheet. And it is one of the easiest types of cookies to make too. This delicious grouping includes favorites like Apple Oatmeal Cookies, Peanut Butter, and the ever-popular Snickerdoodles.

    Baking with Bananas

    Now, being a banana lover, I usually have several bunches hanging around. Of course, that means when they ripen I’m in baking heaven.

    I make favorites like double chocolate banana bread, healthy banana pancakes, banana snacking cake, smoothies, and, with summer fast approaching, frozen chocolate-covered bananas!

    Recipe Variations

    • Vegan - Make these incredible cookies into Vegan Peanut Butter Banana Cookies. Just use this fantastic Vegan Peanut Butter Chip recipe from Dad Goes Vegan for the peanut butter chips and exchange the butter for Earth Balance, a solid form of coconut oil or ⅓ cup mashed avocado and ⅓ cup oil. For the egg, use 1 tablespoon of cornstarch with 2 tablespoons of water or 1 tablespoon flax meal with 3 tablespoons of water.
    • Chocolate Peanut Butter Banana Cookies – add 1 cup peanut butter chips with ½-¾ cup chocolate chips.
    • Gluten-free – substitute 1:1 Gluten-free flour for all-purpose flour.

    How to Make Banana Cookies

    Gather all ingredients - butter, sugar, an egg, vanilla extract, 2 bananas, all-purpose flour, baking soda, salt and peanut butter chips.

    Steps 1-4 to making banana cookie dough..
    1. In a large bowl, cream the butter and the sugar together for about 4 minutes.
    2. Add the eggs and vanilla extract and continue beating until well mixed.
    3. Add 2 mashed bananas and mix again.
    4. Your wet ingredients are now ready for the dry ingredients.

    1. Combine flour, baking soda and salt and add to wet ingredients.
    2. Mix together on low until completely combined.
    3. Stir in peanut butter chips. You can also do half peanut butter and half chocolate at this stage.
    4. The batter is ready to be scooped or dropped onto a cookie sheet.

    1. Bake the cookies. Let them cool for 2-3 minutes on the cookie sheet then move to a wire rack to cool completely.

    1. Melt chocolate chips in the microwave in 30-second increments until melted. If the chocolate is too thick to drizzle, add a little vegetable oil and stir. Place the melted chocolate in a sandwich-sized resealable plastic bag and snip a small hole in one corner.
    2. Place the wire rack of cooled cookies over a cookie sheet to catch all the extra chocolate drippings then squeeze the warm chocolate over the cookies. Let cool, then store in an airtight container.

    These easy peanut butter banana cookies have a beautiful moist banana bread taste and texture with a whole lot of peanut butter flavor. And the rich dark chocolate drizzle is like icing on the cake. Er, I mean cookie. And they’re absolutely amazing!

    So, if you're a big peanut butter and banana fan or just a lover of banana bread, you've got to run, not walk, to the nearest kitchen and bake up some of this yumminess. Enjoy!

    Ingredients

    Cookie Batter

    • ⅔ cup butter room temperature
    • 1 cup sugar
    • 1 egg room temperature
    • 1 teaspoon vanilla extract
    • 1 cup mashed bananas about 2 bananas
    • 2 ¼ cups all-purpose flour
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 1 ½ cups peanut butter chips

    Chocolate Drizzle

    • ¾-1 cup chocolate chips

    Instructions

    • Preheat oven to 400 degrees. Line cookie sheets with parchment paper, silicone mat or spray with nonstick spray.
    • In a large bowl of electric mixer, cream butter and sugar together until creamy, about 4 minutes.
    • Add egg and vanilla extract and beat until well mixed. Add in mashed bananas and continue beating until well incorporated.
    • In a medium bowl, combine flour, baking soda and salt. Turn mixer to low speed and add dry mixture gradually to banana mixture until completely combined.
    • Stir in peanut butter chips.
    • Using a medium cookie scoop, drop cookie dough onto prepared cookie sheet leaving about 2" in-between. You should be able to fit 12 cookies per cookie sheet.
    • Bake in oven for 8-9 minutes or until bottom is brown and cookies look set.
    • Remove from oven and let sit on cookie sheets for 2-3 minutes then remove with spatula to wire racks to cool completely.
    • Once cool, place a cookie sheet or waxed paper under cookies and prepare chocolate.
    • Pour chocolate chips into a microwave safe measuring cup or bowl, Heat in microwave in 30-second increments, stirring in-between, until chocolate has melted. If chocolate is too thick, add a small amount of oil to mixture and stir.
    • Pour into a small ziploc bag. Snip a small corner off then squeeze and drizzle chocolate all over cookies. Let cool and store in airtight container.

        I know Karen, it really is cool! I love our banana trees and always look forward to lots of smoothies and baked goods when the bananas appear. It is one of the best perks of living in South Florida.
