    These Vegan Oatmeal Chocolate Chip Cookies are so delicious you'd never know they had avocado in them. They're soft, chewy, loaded with dark chocolate chips and plenty of vanilla almond flavor, and they're healthy! Great for those who are gluten-free and dairy-free too!

    Healthy Cookies

    Healthy cookies, two words most people wouldn't put together, are tasty treats when you want something sweet minus all the guilt. Just swapping out traditional ingredients for whole grains, nuts, and sweeteners like honey or maple syrup can help boost the healthy factor.

    Among my favorite healthy cookies are these yummy avocado oatmeal cookies. They're easy to make, soft & chewy, have a wonderful almond flavor, and are sweetened with chocolate chips. They're vegan, gluten-free, dairy-free, and nutritious! Perfect for snack time, after a workout, or a quick on-the-go breakfast. Other options include Healthy Oatmeal Cookies and Banana Breakfast Cookies.

    What Makes These Oatmeal Cookies Healthy

    Avocado: Offers beneficial fats, vitamins, magnesium, potassium, and omega 3's. Did you know that avocado can replace butter 1:1 in any muffin, brownie, or cookie recipe? Yep, and it works in quick bread too! Now, how cool is that!

    Agave: I substituted organic agave for the white sugar which has a lower glycemic index and, although higher in calories, is sweeter so you can use less than the sugar called for in a recipe.

    Oats & Almond Flour: These ingredients replace the over-processed white flour and make these delicious cookies gluten-free!

    Almond Butter: Enhances the almond flavor and provides plenty of calcium, healthy fats & potassium.

    Chia seeds: Adds protein, dietary fiber, and a boost in omega-3s.

    Vegan chocolate chips: stick to dark chocolate which contains the most antioxidants of any chocolate. Plus it is lower in sugar than milk chocolate or white chocolate.

    • Old fashioned oats - do not use quick oats as your cookies will lack texture and chewiness and will tend to dry out.
    • Almond flour or almond meal
    • Vegan chocolate chips - enjoy life makes a great product choice.
    • Ground cinnamon
    • Baking soda
    • Sea salt
    • Avocado - make sure it is a ripe avocado, soft and creamy
    • Light agave or honey
    • Almond butter
    • Chia seeds
    • Vanilla extract

    How to Make Vegan Oatmeal Chocolate Chip Cookies

    These are the steps and some photos of the process of making this vegan oatmeal chocolate chip cookies recipe:

    1. Place dry ingredients - oats, almond flour, chia seeds, cinnamon, baking soda, sea salt, and chocolate chips in a large bowl.
    2. Combine wet ingredients - mashed avocado, agave, almond butter, and vanilla extract in a medium bowl. Stir.
    3. Combine avocado mixture with dry ingredients.
    4. Stir the cookie dough until well mixed.
    5. Form into 15 balls by rolling in the palms of your hand. Place on lined baking sheet.
    6. Press down the cookies with the base of a glass dipped in almond flour or use your fingers until they resemble round cookies.

    1. Bake cookies at 350 degrees F for 15 minutes. Let cool on cookie sheet on a wire rack.

    How to Store Cookies with Avocado

    Once your vegan avocado cookies have cooled, place them in an airtight container and store them at room temperature or in the refrigerator. They will last up to 5 days.

    For longer storage, place them in a freezer-safe container or plastic freezer bag and freeze them for up to 3 months.

    Ingredients

    • 1 cup rolled oats
    • ½ cup almond flour or almond meal
    • 1 teaspoon cinnamon
    • ½ teaspoon baking soda
    • ¼ teaspoon sea salt
    • 1 Tablespoon chia seeds
    • ½ cup mini chocolate chips
    • 1 medium avocado, mashed (about ¼ cup)
    • ¼ cup light agave or honey
    • ¼ cup raw almond butter
    • 1 teaspoon pure vanilla extract

    Instructions

    • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone mat.
    • Mix dry ingredients in medium bowl.
    • Mash avocado and combine with agave, almond butter and vanilla extract.
    • Combine wet ingredients with dry ingredients and stir well.
    • Roll into 15 balls and place on cookie sheet. They won't spread so they can be fairly close. Press down with back of a glass dipped in a little almond flour or with your fingers until they resemble round cookies.
    • Bake for 15 minutes.
    • Remove from oven and let cool completely on cookie sheet that has been placed on a wire rack.
    • Store in airtight container.

    Notes

    The cookies, kept at room temperature, are good for 3-4 days but they freeze very well. This allows you to keep them longer & take out as you need them.

      I like the variety of ingredients, but the cookies turned out a bit dry and not sweet enough for me.

        I'm so sorry these didn't turn out as you would like. This cookie is not overly sweet but you can adjust the sweetness by adding slightly more honey or agave (agave being the much sweeter one). However, you will find these are less sweet than a normal oatmeal cookie would be. As to the dryness, it may be that your avocado was not ripe enough. Also, did you use raw almond butter versus a regular processed variety? The raw versions tend to be more liquidy hence moistening the overall cookie. I hope this helps and you give them another chance.
