    Sparkling Pomegranate Cocktail

    A sparkling pomegranate cocktail that is perfect to celebrate Christmas or ring in the new year. While the champagne makes this light and bubbly, the pomegranate juice brings a nice tartness to the cocktail offset by the sweet orange liqueur and agave.  Cheers!

    Isn't this just the prettiest cocktail to celebrate the holidays? I love to make sparkling drinks to have for Christmas morning and this one, decked out in red & green, is perfect for this time of year. I usually make Mimosas or Cranberry Mimosas for the big day but this year I decided to whip up something new.

    Sparkling Pomegranate Cocktail 6 | 2 Cookin Mamas

    This pomegranate cocktail is very simple to throw together and perfect for a hectic Christmas morning. It's also great to make by the pitcherful for a festive New Year's bash.

    I originally put this cocktail together with just pomegranate juice, a little triple sec and champagne but decided to go one step further and add some vodka.

    The ingredients create a nice balance with the combination of tart pomegranate juice offset by the sweetness of the orange liqueur and agave. Of course, everyone always likes a little bubbly, so top it off and toast the season.

    For those that want to tame it down a little, the vodka isn't necessary, as it tastes just as good without it. Just add a little more orange juice to take it's place and you'll have one smooth, light & yummy cocktail.

    I believe Christmas is a season for spending time with loved ones and friends and enjoying that precious time together. And I've been busy getting ready to do just that! I can't wait for Christmas to arrive as my daughter, husband and 2 adorable grandkids will be joining us from Atlanta.

    I've baked and cooked up a storm with all their favorites, including gluten-free versions for my daughter, Christina, and can't wait for them to get here.

    Ingredients

    • ½ cup vodka
    • ¼ cup pomegranate juice cold
    • ¼ cup triple sec
    • ¾ cup champagne cold
    • 1-2 teaspoons agave sweeten to taste
    • Garnish: pomegranate seeds & rosemary sprigs

    Instructions

    • Mix all above ingredients together except for garnish. Pour into champagne glasses or flutes. Add pomegranate seeds and a long rosemary sprig & serve.
    • Note: If not serving immediately, wait to add champagne.
