Eggnog Pudding Shots
Ingredients
- 2 boxes instant vanilla pudding (3.4 ounces each)
- 1 ½ cups spiced rum
- 1 cup eggnog
- ½ cup whole milk
- 1 teaspoon ground nutmeg
- 4 ounces Cool Whip
- Garnishes: nutmeg, Cool Whip, star anise (optional)
Instructions
- Place 19 plastic shot cups up on a cookie sheet.
- In a large mixing bowl, combine the pudding mix, spiced rum, eggnog, milk, and 1 teaspoon of nutmeg. Beat until thick.
- Fold in Cool Whip until no white streaks are left.
- Fill each shot cup ¾ of the way full.
- Serve right away or, for a colder shot, cover and chill for about 1 hour.
- Garnish just before serving with a dollop of Cool Whip or whipped cream, a sprinkle of nutmeg, and a whole star anise.
- Note: I used a frosting bag and an Ateco 824 frosting tip to make the Cool Whip dollops. You can also use a small zip-top bag with a corner snipped out.
