Breakfast Cereal Cookies
I love making cookies with cereal! Cookies made with cereal flakes are both chewy and crispy at the same time. It's that combination of textures that makes them so much fun to eat. This cereal cookies recipe is sweet and nutty - and gives you an excuse to indulge in cookies for breakfast.

You will fall in love with cookies with cereal. Not only do they taste like your favorite sweet cookies, but they have an extra ingredient that adds a delightful crunch! Cereal drop cookies can be made in any flavor you want - just change the type of cereal you use.

Ingredients
- White Granulated Sugar
- Light Brown Sugar
- Vegetable Shortening
- Eggs
- Vanilla Extract
- All-purpose Flour
- Baking Soda
- Salt
- Special K Cereal (Vanilla Almond Cereal is my first choice) - or use your favorite crunchy flake cereal
How to Make Cereal Cookies
- In a large mixing bowl, place shortening and both sugars and cream until light and fluffy.
- Continue beating while adding in eggs and vanilla extract.
- It should look light and fluffy.
- In a small bowl, combine flour, baking soda, and salt.
- Add to creamed mixture.
- Beat until well mixed.
- Stir in crunchy cereal.
- Mix well with a spoon.
- Place heaping tablespoons of dough onto ungreased cookie sheets at least 2" apart as these cookies will spread. (mat used only for photos)
- Bake for 10 to 12 minutes. Cool on cookie sheets on wire racks for 2 to 3 minutes then remove to wire racks to cool completely. They will crisp up as they cool down.
This recipe originally was derived from my mom's Wheatie cookies recipe but I love the variation I used with my favorite Special K Vanilla Almond Cereal. It may not exactly be breakfast material but they sure are a tasty addition to your Christmas baking list.

- Cereal Chocolate Chip Cookies - Add 1 cup of chocolate chips.
- Special K Peanut Butter Cookies - Substitute half of the shortening with peanut butter.
- Special K Cookies with Butterscotch - Add 1 cup of butterscotch chips.
- Special K Cookies with Coconut - Add ½ cup of coconut flakes.

Cereal Cookies
Ingredients
- 1 cup sugar
- 1 cup light brown sugar, packed tightly
- 1 cup Crisco vegetable shortening
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- pinch salt
- 4 cups Special K Cereal or any crunchy flake cereal
Instructions
- Preheat oven to 375 degrees.
- In a large mixing bowl, cream sugars and shortening until light and fluffy.
- Continue beating while adding in eggs and vanilla.
- In a small bowl, combine flour, baking soda and salt.
- Add to creamed mixture, beating until well mixed.
- Stir in flake cereal.
- Place heaping tablespoons of dough on to ungreased cookie sheets at least 2" apart as these cookies will spread.
- Bake for 10 to 12 minutes. Cool on cookie sheets on wire racks for 2 to 3 minutes then remove to wire racks to cool completely. They will crisp up as they cool down.
- Store in airtight container.
