    Ingredients

    • 2 pounds russet potatoes (about 3 potatoes) peeled & cut into ½" cubes (Yukon Gold can also be used)
    • 1 ½ Tablespoons olive or avocado oil
    • 1 teaspoon sea salt
    • ½ teaspoon garlic powder
    • ½-3/4 cup onion chopped
    • ½ cup red bell pepper chopped
    • 1 ½ Tablespoons butter melted
    • 2 Tablespoons sliced green onions for garnish (optional)

    Instructions

    • Preheat air fryer to 390°F for 5 minutes.
    • In a large bowl, combine diced potatoes, salt, and garlic powder with oil.
    • Spray the air fryer basket with cooking spray and place potatoes in the bottom.
    • Air fry at 390°F for 10 minutes, shaking once at the halfway mark.
    • While the potatoes are cooking, combine the chopped onion and red bell pepper with the butter.
    • When the potatoes are done air frying, add the onion-pepper mixture to the air fryer and toss with the potatoes.
    • Air fry for an additional 10 minutes or until the potatoes are tender, shaking once halfway through.
    • Place in a serving bowl and garnish with sliced green onions.
