    Using your air fryer means food always comes out deliciously crispy without having to use unhealthy or messy grease. Plus, it takes just a few minutes to preheat. It's one of my favorite kitchen appliances because it's almost foolproof.

    When you make this Hasselback potatoes air fryer recipe, you'll be shocked at how incredibly gourmet it tastes. Plus it cuts down on the baking time versus baking in the oven and you won't believe how easy clean-up is!

    What are Hasselback Potatoes?

    It's a funny name, but they are an iconic and memorable side dish. Hasselback potatoes are cut into thin slices that resemble a fan. You can either serve them with just butter and spices or add tasty toppings in between each slice.

    Why are they called Hasselback Potatoes?

    They are named after a restaurant in Stockholm, Sweden, Hasselbacken. This recipe was first introduced by the Hasselbacken in the 1940s.

    • Potatoes - Russet and Yukon Gold make the best air-fried potatoes. Red potatoes are also a good option.
    • Olive Oil
    • Butter
    • Garlic
    • Salt
    • Black pepper
    • Italian Seasoning
    • Cheddar cheese - or sub in your favorite such as gruyere or gouda
    • Bacon
    • Green Onion - makes a great garnish or opt for chopped parsley

    How to Cut Hasselback Potatoes

    You don't need a fancy potato slicer, cutter, or rack for cutting hasselback potatoes. All you need is a sharp knife and chopsticks or wooden spoons.

    Here's the best way to cut hasselback potatoes:

    1. Scrub the potatoes clean and dry them off.
    2. Place the potato on a cutting board.
    3. Put chopsticks on each side.
    4. Slice through the potato every ⅛ to ¼-inch until the knife reaches the chopsticks.

    The chopsticks will aid in stopping the knife before slicing all the way through the potato. Be careful on the smaller ends as they don't always rest on the top of the chopsticks.

    How to Make Hasselback Potatoes in Air Fryer

    1. Scrub potatoes clean and pat dry. Place between chopsticks, thick skewers, or wooden spoons and cut into ⅛"-¼" wide slices with a sharp knife.

    1. Once all potatoes are cut, gather the rest of the ingredients.
    Steps to make herbed butter.
    1. Mix the herb butter by placing olive oil, 3 tablespoons of melted butter, garlic, and seasonings in a small bowl.
    2. Whisk well.

    1. Preheat the air fryer to 350°F for 4 minutes. Carefully place the sliced potatoes in the air fryer basket that has been lined with parchment paper and sprayed with cooking spray. Brush the herb butter mixture over the potatoes making sure to get between the slices as well.
    2. Air fry the potatoes for 35 minutes then brush with 2 tablespoons melted butter and air fry for another 10 minutes.

    1. To finish these gloriously tender on the inside and crispy on the outside Hasselback potatoes, remove carefully with tongs, set on a platter, and sprinkle with cheese and crumbled bacon. Garnish with green onions and serve with a side of sour cream.

    How long to cook hasselback potatoes in air fryer?

    The length of time for air frying hasselback potatoes depends on the size of the potato, the thickness of the slices, and the air fryer.

    • Large russet potatoes can take up to 45 minutes. Medium to small potatoes can take up to 30 minutes.
    • Thick slices take longer than thin ones.
    • Time can also vary for each brand and type of air fryer (basket or rack).

    Recipe Tips

    • Use a Sharp Knife: Make sure your knife is sharp so it easily cuts through the potato. Do not use a serrated knife.
    • Use Wooden Spoons: If you don't have chopsticks, take two wooden spoons and place them on either side of your potato.
    • Use a Hasselback Cutter: If you aren't confident with making even slices, you can use a hasselback potato cutter rack.
    • Thick or Thin Slices: You can cut the potato slices into any thickness. Thin slices get crispier than thick ones.
    • Crispy Tops: If the potatoes aren't getting as crispy as you like, increase the heat to 380°F for the last 5 minutes.
    • Check for Doneness: Potatoes are done when a toothpick or skewer will easily go through them.
    • Space Between Them: Keep the potatoes in a single layer in the air fryer and don't stack them.

    Recipe Variations

    These loaded cheesy bacon-topped hasselback potatoes are easy to change up with different toppings and flavors. Here are some ideas:

    • Garlic Hasselback Potatoes - simply leave off the cheese, bacon, and other toppings.
    • Parmesan Hasselback Potatoes - Substitute the cheddar with Parmesan cheese.
    • Ranch Hasselback Potatoes - Substitute the Italian seasoning with ranch seasoning.
    • Rosemary Hasselback Potatoes - Substitute the Italian seasoning with fresh or dried rosemary.
    • Vegetarian Hasselback Potatoes - Leave off the bacon.
    • Vegan Hasselback Potatoes - Omit the butter, bacon, and cheese.

    What to Serve with Hasselback Potatoes

    For a special occasion, I love a good steak with these potatoes but any number of meat dishes will pair well. Try any grilled or baked fish such as Grilled Mahi or Crab Stuffed Salmon, grilled pork chops or Instant Pot Garlic Pork Tenderloin, or just a simple baked or grilled chicken.

    Make Ahead

    You can make hasselback potatoes a day or two in advance. Let them cool completely then store them in an airtight container in the refrigerator. Reheat them in the air fryer for a few minutes or until warmed through.

    How to Store, Freeze, and Reheat

    Store leftover hasselback potatoes in an airtight container in the refrigerator for up to 4 days.

    To Freeze: Allow the potatoes to cool completely. Place them in a freezer-safe container and freeze them for up to 3 months. Thaw them in the fridge overnight.

    To Reheat: Place them in the air fryer and reheat them at 350°F for 5 minutes or until heated through.

    It's up to you. Peeled hasselback potatoes aren't as crispy as ones with the skin.

    Do you parboil hasselback potatoes?

    You do not need to parboil the potatoes before air frying them.

    Ingredients

    • 4 large baking potatoes russets work well
    • 5 Tablespoons butter melted, divided
    • 2 Tablespoons olive oil
    • 1 teaspoon minced garlic
    • 1 teaspoon Italian seasoning
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ cup shredded cheddar or Parmesan cheese
    • 4 slices bacon cooked and crumbled
    • Garnish: sliced green onion or parsley

    Instructions

    • Preheat air fryer for 4 minutes at 350 degrees.
    • Line the bottom of the air fryer basket with parchment paper.
    • To prepare potatoes, wash well and pat dry with paper towel.
    • Slice potatoes into ⅛"-¼" slices stopping before cutting all the way through. The easiest way to do this is to place 2 chopsticks on either side of the length of the potato. Hold there and slice, stopping when the knife hits the chopsticks.
    • In a small bowl, whisk 3 tablespoons of melted butter, olive oil, minced garlic, and seasonings together.
    • Place potatoes into hot sir fryer basket and brush the butter mixture over them making sure to get in-between the slices.
    • Air fry potatoes for 30 minutes.
    • Remove basket from air fryer and take the remaining 2 tablespoons of melted butter and brush over the potatoes then return to the air fryer and cook for 10 more minutes.
    • Carefully remove potatoes to serving platter or dish and sprinkle with cheese and bacon bits.
    • Finish with a garnish of sliced green onion.

    Notes

    Oven method
    Preheat oven to 425 degrees. prepare potatoes as suggested above and cook for 45 minutes. Drizzle with more butter if needed halfway through cooking time.
