Well, Mardi Gras has passed but the Florida Keys are beckoning soon and the “Conchs” love a good hurricane down there. No, not that kind of hurricane! Just the kind with lots of rum in it!

If you’ve ever been to the Keys, they are laid back and tropical. It never fails to amaze me at the feeling that I’ve traveled far from the mainland and have somehow arrived on a Caribbean island. And this drink is full of all those island flavors, orange juice, pineapple juice, a little pomegranate grenadine syrup and, of course, rum!

Both light and dark rum give this just the right punch. Word of warning, through experience, this drink sneaks up on you with its potency so just relax and take them slow and easy.

This cocktail can be made with store bought grenadine or you can make your own. The homemade version is so much better than the bottled (read that as no high fructose corn syrup) and only takes about 25 minutes.  Hope you enjoy! Cheers!



Hurricane Cocktail

Yield: 1 cocktail

A fruity cocktail that will transport you to the islands. Light & dark rum combine with orange and pineapple juices to make a refreshing colorful drink with a punch.

Ingredients

    Hurricane
  • 2-oz light rum
  • 2-oz dark rum
  • 4-oz orange juice
  • 4-oz pineapple juice
  • 1-oz Frangelico or Amaretto
  • 1-oz grenadine syrup
  • Crushed ice
  • Grenadine
  • 2-1/4 lbs pomegranates, using seeds only
  • 2 cups water
  • Sugar equal to amount of juice

Directions

    Hurricane
  1. Combine all ingredients except ice into shaker. Shake then pour over crushed ice in hurricane glasses and garnish with a pineapple or orange wedge.
  2. Grenadine
  3. Remove seeds from pomegranates. Place in medium saucepan with water and simmer for 5 minutes. Push through fine sieve or cheesecloth then discard seeds.
  4. Measure the amount of juice you have then pour back into saucepan. Add an equal amount of sugar and bring to boil. Simmer for 10-15 minutes then cool. Store in bottle with lid.
  5. You can add red food coloring but I don't like to tamper with nature.

Notes

Homemade Grenadine takes an additional 25 minutes.
