Recipe Tips
- The right kind of pork is crucial for flavorful and juicy burgers. Use ground pork that's not too lean – ideally, it should have a fat content of around 20%. This will ensure your burgers remain moist and juicy.
- Be gentle when you mix the meat. Overworking the meat can make your burgers tough.
- Divide the meat mixture into equal portions so all the burgers will be the same size.
- When shaping the large burgers, don't make them too compact or they'll be tough. Make an indentation in the center of each patty with your thumb to prevent it from puffing up during cooking.
- Make sure your grill or pan is hot before you add the burgers. This will help to sear the outside and keep the juices inside.
- Be careful not to overcook the burgers. Pork burgers need to be cooked to a minimum internal temperature of 160 degrees F for safety. A instant-read meat thermometer is a useful tool for checking the temperature. Remember, the burgers will continue to cook a little after they're removed from the heat (carryover cooking), so take them off just before they reach the desired temperature.
- After you remove the burgers from the heat, let them rest for a few minutes before serving. This allows the juices to redistribute throughout the meat, resulting in a juicier burger.
Recipe Variations
- Cheese - Add ½ cup of shredded cheese to the mixture for cheesy pork burgers.
- Keto - Use crushed pork rinds instead of panko. Serve the burgers without buns. This makes a great low-carb dinner too!
- Meat Combo - Substitute up to half of the ground pork with ground beef, ground turkey, venison, lamb, or chorizo (the raw Mexican chorizo).
- Seasoning - Use your favorite seasoning mix or make spicy pork burgers with cajun or creole seasoning.
