- Sour cream or ranch dressing for dipping
What Cheese for Quesadilla?
The best cheese for quesadillas is one that melts nicely and pairs well with the quesadilla filling. Freshly grated cheese from a block is better because pre-shredded cheese contains anti-caking agents that prevent the cheese from melting smoothly.
For a Buffalo quesadilla, you'll want to use Colby Jack, Cheddar, Monterey Jack, or a Mexican blend.
How to Make Buffalo Chicken Quesadillas
- In a medium mixing bowl, combine chicken, green onions, and cilantro.
- Sprinkle in lime juice and season with salt and pepper.
- Pour in buffalo sauce.
- Stir well.
- Lay one tortilla on a flat surface and top one-half with ¼ cup of cheese.
- Follow that with ¼ of the buffalo chicken mixture.
- Sprinkle another ¼ cup of cheese on top of the buffalo chicken mixture.
- Fold the tortilla in half.
Repeat with remaining tortillas while heating a skillet over medium to medium-low heat. DO NOT USE ANY OIL OR SPRAY ON THE PAN.
- Lay the tortilla on the hot skillet and press down lightly. Cover skillet.
- Cook for 3 minutes on one side then flip and cook for 3 minutes on the other side or until brown and crisp and the cheese is melted.
Remove the fried quesadillas to a cutting board and repeat with other tortillas.

- 1 Tablespoon lime juice
- 2-3 green onions sliced
- ¼ cup cilantro chopped & extra for garnish
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 4 large flour tortillas
- 2 cups shredded cheddar Monterey jack or Mexican blend cheese
- Garnish: sour cream or ranch dressing for dipping
Instructions
- In a medium mixing bowl, combine chicken, wing sauce, lime juice, green onions, cilantro, salt and pepper. Stir well.
- Heat a skillet over medium to medium-low heat.
