    Crispy and loaded with flavor, buffalo chicken quesadillas are the perfect combination of comfort food and spiciness. Just a few simple ingredients and a few minutes of cooking time, creates a delicious appetizer, quick lunch, or fun dinner.

    Mexican Fusion Food

    Buffalo Quesadilla is a tasty fusion of American and Mexican cuisine. It's a perfect combo of American bar food (buffalo wings) and Mexican street food (quesadillas). Every bite makes you look forward to the next one. It's a cheesy, spicy, lip-licking combo pan-fried in a crispy tortilla.

    The fun part of cooking is taking recipes and adding fun twists to them, just like I did with Korean Pork Tacos, Italian Meatball Tacos, and Cheeseburger Pizza.

    What is a Quesadilla?

    A quesadilla is a popular Mexican dish made with a tortilla that is filled with melted cheese and other ingredients of your choice, such as meat, beans, vegetables, or spices. The tortilla is folded in half and then toasted or grilled until the cheese is melted and the tortilla is crispy.

    Quesadillas can be served as a snack, appetizer, or main dish, and are often accompanied by salsa, guacamole, or sour cream. They are versatile and delicious and can be customized to suit your tastes and preferences.

    Why You'll Love Chicken Buffalo Quesadillas

    Whether you love to light up your taste buds with tons of spice or prefer milder dishes, you can make these quesadillas just how you like them. They are just the ticket when you're craving bold buffalo wings, but don't want all the mess of frying (or eating) them.

    These healthy buffalo chicken quesadillas fit in with a low-calorie, high-carb lunch and will fuel you with energy.

    Ingredients

    Ingredients for buffalo quesadillas.
    • Shredded chicken
    • Buffalo wing sauce - Frank's Red Hot brand recommended
    • Fresh lime juice
    • Green onions
    • Fresh cilantro
    • Salt & Pepper
    • Large burrito-sized flour tortillas
    • Shredded Cheddar, Monterey jack, or Mexican blend cheese
    • Sour cream or ranch dressing for dipping

    What Cheese for Quesadilla?

    The best cheese for quesadillas is one that melts nicely and pairs well with the quesadilla filling. Freshly grated cheese from a block is better because pre-shredded cheese contains anti-caking agents that prevent the cheese from melting smoothly.

    For a Buffalo quesadilla, you'll want to use Colby Jack, Cheddar, Monterey Jack, or a Mexican blend.

    How to Make Buffalo Chicken Quesadillas

    1. In a medium mixing bowl, combine chicken, green onions, and cilantro.
    2. Sprinkle in lime juice and season with salt and pepper.
    3. Pour in buffalo sauce.
    4. Stir well.

    1. Lay one tortilla on a flat surface and top one-half with ¼ cup of cheese.
    2. Follow that with ¼ of the buffalo chicken mixture.
    3. Sprinkle another ¼ cup of cheese on top of the buffalo chicken mixture.
    4. Fold the tortilla in half.
    Quesadillas folded and ready to cook.

    Repeat with remaining tortillas while heating a skillet over medium to medium-low heat. DO NOT USE ANY OIL OR SPRAY ON THE PAN.

    How to cook chicken quesadillas.
    1. Lay the tortilla on the hot skillet and press down lightly. Cover skillet.
    2. Cook for 3 minutes on one side then flip and cook for 3 minutes on the other side or until brown and crisp and the cheese is melted.

    Remove the fried quesadillas to a cutting board and repeat with other tortillas.

    To serve, cut each quesadilla in half and serve warm with sour cream, blue cheese, or ranch dressing and some celery sticks.

    Recipe Variations

    You can substitute or add to the chicken quesadilla fillings for extra flavors or to fit your taste preferences. Here are some ideas:

    • Buffalo chicken quesadilla with cream cheese - Spread a thin layer of cream cheese on the tortilla.
    • Cheese - Use blue cheese or Cojita cheese.
    • Herbs - Omit the cilantro if you do not care for it. You can substitute it with parsley.
    • Meat - Add some crispy bacon bits.
    • Veggies - Bell pepper, corn, or onion.

    Recipe Tips

    • The easiest way to shred cooked chicken is to put it in a stand mixer with a paddle attachment and mix on medium speed.
    • Spray the tortilla lightly with oil to help make it crispy.
    • Make sure the pan is large enough for the tortilla to lay flat and not bend up the sides.
    • Make sure the pan is hot before placing the tortilla in it.
    • Use a pizza cutter to cut the quesadilla into triangle wedges.

    You'll want to serve Buffalo chicken quesadillas with a creamy quesadilla dipping sauce such as ranch dressing, blue cheese dressing, or sour cream.

    How to Store, Freeze, and Reheat Quesadillas

    Place quesadilla leftovers in an airtight container and store them in the refrigerator for up to 3 days.

    To Freeze: Wrap each quesadilla in parchment paper or plastic wrap and then either again with aluminum foil or place the plastic-wrapped quesadillas in a plastic freezer bag. Freeze for up to 3 months. Thaw quesadillas in the fridge overnight.

    Reheat a quesadilla in a skillet over medium to medium-high heat for a few minutes on each side.

    Ingredients

    • 2 cups shredded chicken rotisserie is quickest and easiest
    • ¼-1/2 cup buffalo wing sauce
    • 1 Tablespoon lime juice
    • 2-3 green onions sliced
    • ¼ cup cilantro chopped & extra for garnish
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 4 large flour tortillas
    • 2 cups shredded cheddar Monterey jack or Mexican blend cheese
    • Garnish: sour cream or ranch dressing for dipping

    Instructions

    • In a medium mixing bowl, combine chicken, wing sauce, lime juice, green onions, cilantro, salt and pepper. Stir well.
    • Heat a skillet over medium to medium-low heat.
    • Lay one tortilla on a flat surface and top one-half of it with ¼ cup of cheese. Top with ¼ of the buffalo chicken mixture then sprinkle another ¼ cup of cheese on top. Fold the tortilla in half.

    STORE/FREEZE/REHEAT
    Store: Place in an airtight container in the refrigerator for up to 3 days.
    To Freeze: Wrap each quesadilla in parchment paper or plastic wrap and then either again with aluminum foil or place the plastic-wrapped quesadillas in a plastic freezer bag. Freeze for up to 3 months. Thaw quesadillas in the fridge overnight.
    Reheat: Heat a dry skillet over medium to medium-low heat and cook for a few minutes on each side.
