    This easy Watermelon Splash cocktail is perfect for hot summer days. All you need is a blender, watermelon, pineapple, rum and some sparkling pineapple water. A tropically flavored cocktail that is sure to cool you off & turn your party on!

    I found a new way to make my favorite cocktail that I first had at the Green Turtle Inn in the Florida Keys. This Watermelon Splash cocktail is even better than the original! This one is a little fruitier and contains less sugar than the original version.

    I also found a new sparkling water that is now my go-to whenever I want something bubbly, cool, and refreshing - Bai Bubbles! I'm not being paid to say that I just love all the flavors and, even better, getting it without all the calories.

    My favorite flavors are grapefruit, blood orange, and, of course, pineapple. You can still use soda in your version but it really is just as delicious, actually more so, with the Bai Bubbles.

    Directions

    To create this refreshing cocktail all you need is a blender, chunks of watermelon and fresh pineapple, some rum or vodka, and several cans of Bai Bubbles. That's it!

    Just blend up the watermelon and pineapple with either rum or vodka then pour into your favorite glasses. I used my stemless wine glasses and they worked perfectly.

    Add the sparkling water and garnish with either a watermelon wedge, lemon slice, or pineapple slice. Or go for it and garnish with all three!

    It's deliciously thick, kind of a cross between a regular cocktail and a slushie, and perfect to sip with or without a straw. Now, sit back, relax and take a sip.

    Don't you feel like you just got cooler? Can't you feel the island breezes? OK, maybe I went a little far with that one but it really does have all the tropical flavors of summer in a glass. It's perfect for two or as a punch for your next picnic or BBQ.

    So what are you waiting for, it's 5 o'clock somewhere, so go blend some up right now! I promise you'll love it!

    Ingredients

    • 4 cups watermelon, cut up
    • 2 cups fresh pineapple, cut up
    • 1-2 cans Bai Bubbles pineapple flavor
    • 6 oz vodka or rum (optional)
    • Garnish: Pineapple or watermelon wedges lemon or lime slices

    Instructions

    • In a blender, combine watermelon and pineapple. Cover and blend until smooth.
    • Add vodka or rum and blend again.
    • Divide evenly between four goblets.
    • Top glasses off with Bai bubbles.
    • Garnish each glass with a wedge of pineapple or watermelon.
