    You'll love the crunch of mint in these cookies with the sweet taste of chocolate all set in a buttery cookie. The magical mix of chocolate and peppermint has to be one the best flavor combos of Christmas!

    Chocolate chip cookies with peppermint are quick and easy to make and would be the perfect cookie for shipping to faraway family and friends. They're also great for a Christmas cookie exchange.

    An easy kid-friendly recipe so your children can be involved with making these peppermint chip cookies.

    Ingredients for Peppermint Crunch Cookies

    • All-Purpose Flour
    • Brown Sugar
    • White Granulated Sugar
    • Butter
    • Eggs
    • Vanilla Extract
    • Salt
    • Baking Soda
    • Peppermint Chips
    • Chocolate Chips

    If you can't find Andes peppermint baking chips, you can make crushed candy cane cookies with candy cane pieces (crushed candy canes or peppermint candy). Be sure to crush the candy into very small pieces.

    How to Make Chocolate Chip Peppermint Cookies

    Prep steps to make peppermint cookies.
    1. In a small bowl, combine flour, baking soda and salt.
    2. In a large mixing bowl, beat both sugars and butter together until creamy.
    3. Add vanilla extract and eggs, one at a time, and beat until smooth.
    4. Gradually at flour mixture and mix well.
    5. Add peppermint and chocolate chips.
    6. Stir until evenly distributed.

    1. Using a small cookie scoop, scoop onto ungreased cookie sheets, spacing about 2" apart.
    2. Bake at 375°F for 9-11 minutes or until just starting to turn golden brown.

    Recipe Tips

    • Make sure your baking soda is fresh. Check the box for the expiration date or just go ahead and get a new one before you start your holiday baking.
    • You can use dark, semi-sweet, milk, or white chocolate chips.
    • Line the baking sheet with parchment paper or a silicone mat to help prevent the cookies from sticking to the baking sheet and for easy cleanup.
    • Cool the baking sheet completely between baking batches. Run it under cold water to cool it down quickly.

    Make Ahead

    You can make the dough weeks or months in advance. Prepare the cookies but don't bake them. Instead, place the baking sheet in the freezer. Once frozen, transfer the cookie dough balls to a freezer-safe container or plastic freezer bag. Freeze for up to 2 months.

    When ready to bake, either thaw the dough in the fridge overnight or bake the frozen dough. If baking from frozen, add a minute or two to the baking time.

    How to Store and Freeze Baked Cookies

    Place the cookies in an airtight container or heavy plastic storage or freezer bag. Store them at room temperature for up to 5 days or freeze them for up to 3 months. If frozen, thaw them either in the fridge or at room temperature.

    Ingredients

    • 2 ¼ cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup butter, 2 sticks room temperature
    • ¾ cup granulated sugar
    • ¾ cup light brown sugar, packed
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 1 cup chocolate chips (multi-colored are pretty if you can find them)
    • 1 cup Andes Peppermint Crunch chips

    Instructions

    • Preheat oven to 375°F.
    • In a medium bowl, combine flour, baking soda and salt. Set aside.
    • In an electric mixer, beat butter and both sugars until smooth and creamy. Continue to beat while adding vanilla and then eggs, one at a time. Beat until creamy and well incorporated.
    • Gradually add the flour mixture and mix well.
    • Stir in chocolate and peppermint chips.
    • Using a small cookie scoop or spoon, drop a tablespoon of dough onto ungreased cookie sheets, spacing about 2" apart.
    • Bake 9-11 minutes or until golden brown.
    • Let cool about 5 minutes on cookie sheets then remove to wire racks to finish cooling.

    STORE/FREEZE
