How to Make Chocolate Chip Peppermint Cookies
- In a small bowl, combine flour, baking soda and salt.
- In a large mixing bowl, beat both sugars and butter together until creamy.
- Add vanilla extract and eggs, one at a time, and beat until smooth.
- Gradually at flour mixture and mix well.
- Add peppermint and chocolate chips.
- Stir until evenly distributed.
- Using a small cookie scoop, scoop onto ungreased cookie sheets, spacing about 2" apart.
- Bake at 375°F for 9-11 minutes or until just starting to turn golden brown.
Recipe Tips
- Make sure your baking soda is fresh. Check the box for the expiration date or just go ahead and get a new one before you start your holiday baking.
- You can use dark, semi-sweet, milk, or white chocolate chips.
- Line the baking sheet with parchment paper or a silicone mat to help prevent the cookies from sticking to the baking sheet and for easy cleanup.
- Cool the baking sheet completely between baking batches. Run it under cold water to cool it down quickly.
Make Ahead
You can make the dough weeks or months in advance. Prepare the cookies but don't bake them. Instead, place the baking sheet in the freezer. Once frozen, transfer the cookie dough balls to a freezer-safe container or plastic freezer bag. Freeze for up to 2 months.
When ready to bake, either thaw the dough in the fridge overnight or bake the frozen dough. If baking from frozen, add a minute or two to the baking time.
How to Store and Freeze Baked Cookies
Place the cookies in an airtight container or heavy plastic storage or freezer bag. Store them at room temperature for up to 5 days or freeze them for up to 3 months. If frozen, thaw them either in the fridge or at room temperature.
