Air Fryer Pulled Pork Nachos
Ingredients
- 3-4 cups tortilla chips make sure the chips are sturdy in order to hold fillings, Tostitos works great!
- ½ pound pulled pork either homemade or store-bought
- 1 Tablespoon taco seasoning
- ¼ cup water
- ½ cup black beans drained and rinsed
- 2 cups shredded cheese cheddar, Monterey Jack or a combination of both
- Garnishes: chopped tomatoes, sliced black olives, jalapenos, cilantro, salsa, sour cream, avocado
Instructions
- Mix taco seasoning and water in a medium bowl.
- Place pulled pork in the seasoning mix and toss to coat. Heat in a microwave-safe dish for 1 minute just to warm it slightly.
- Lay a piece of parchment paper in the bottom of the air fryer basket. Cut off any that extends beyond the basket so as not to touch the heating element. Make sure the parchment paper is long enough that it gives you handles to aid in lifting out the finished nachos.
- Place ½ of the tortilla chips in the bottom of the basket. Make sure they cover the bottom and overlap slightly. Make sure there are no gaps as you don't want to lose any of that ooey gooey melted cheese.
- Scatter half of the warmed pulled pork on top of the chips.
- Add half the black beans followed by half the cheese.
- Repeat all the layers starting with the tortilla chips.
- Set the air fryer to 350°F and air fry for 5 minutes or until the cheese is nice and melted.
- Lift out of the air fryer by grabbing the ends of the parchment and set them on a plate.
- Top with your favorite garnishes like chopped tomatoes, sliced jalapenos, sliced black olives and a sprinkle of cilantro.
- Serve sour cream, salsa and smashed avocado or guacamole on the side or dolloped on top.
