    Ingredients for almond butter granola.

    Here's what you'll need for this granola with nuts and seeds:

    • Rolled Oats - if you have a gluten intolerance make sure the oats state they are gluten-free
    • Almond Butter
    • Honey
    • Mixed Nuts - unsalted is best but salted works as well
    • Coconut Oil
    • Vanilla Extract
    • Chia Seeds
    • Flax Seeds
    • Mini Chocolate Chips

    Best Nuts for Granola

    Any nuts are great for granola - use the nuts you enjoy the most.

    Salted or unsalted? The choice is yours! If you want a sweet and salty flavor combo, then used salted ones. If you're watching your sodium intake, then used unsalted ones.

    Honey roasted nuts would be great for this recipe. You can also use nuts with other flavors or smoked nuts for a smoky touch.

    Are you allergic to nuts? Make granola without nuts. Or make granola with seeds instead. Pepitas (pumpkin seed kernels) and sunflower seeds are larger and a great substitute for chopped nuts.

    How to Make Honey Almond Butter Granola

    Steps to make honey granola.
    1. Place rolled oats, mixed nuts, chia seeds, ground flaxseed, and mini chocolate chips in a large bowl.
    2. In a medium bowl, combine coconut oil and honey.
    3. Add in almond butter and vanilla extract.
    4. Stir well.
    5. Pour liquid ingredients into dry ingredients.
    6. Stir until all the ingredients are well-coated. I like to use my hands to work the liquid through the oats.

    1. Divide the mixture between two cookie sheets lined with parchment paper. Make sure to spread it out so it is in a single layer.
    2. Bake at 300°F for 35-45 minutes, stirring halfway through. Remove from oven and let cool on cookie sheets. Break up with your hands and store in an airtight container.

    • Nut Butter - Cashew butter, cookie butter, peanut butter, or SunButter (sunflower seed butter).
    • Chips - Butterscotch, caramel, or white chocolate chips.
    • Citrus - Add some lemon, lime, or orange zest.
    • Dried Fruit - Blueberry, cherry, coconut, cranberry, or raisin.
    • Sweetener - Caramel sauce or maple syrup.
    • Nuts - Instead of mixed nuts, use just almonds, cashews, macadamia nuts, pecans, tiger nuts, or walnuts.
    • Seeds - Pumpkin seeds or sunflower seeds.
    • Spices - Add cinnamon or pumpkin pie spice.

    How to Store Homemade Granola

    Allow granola to cool to room temperature. Place the cooled granola in an airtight container or plastic ziptop bag and store it in a cool, dark place for up to 2 weeks.

    Freeze granola in a plastic freezer bag or a freezer-safe container for up to 4 months. Thaw it at room temperature.

    Ingredients

    • 3 cups rolled oats,
    • 1 cup chopped unsalted mixed nuts such as almonds, cashews, pistachios, peanuts, pecans
    • ¼ cup chia seeds
    • ¼ cup ground flaxseed
    • ½-1 cup mini chocolate chips
    • ¼ cup coconut oil, melted
    • ½ cup almond butter
    • ¼ cup honey
    • 1-2 teaspoons pure vanilla extract

    Instructions

    • Preheat oven to 300 degrees. Line 2 cookie sheets with parchment paper or spray with a nonstick spray.
    • In a large bowl, combine oats, nuts, chia seeds, flaxseed and chocolate chips.
    • In a small microwave-safe bowl, melt coconut oil in microwave for about 20-30 seconds. Whisk in almond butter, honey, and vanilla extract. Mix well.
    • Add liquid to dry ingredients and stir until oats and nuts are well coated.
    • Spread evenly onto prepared cookie sheets.
    • Bake 35-45 minutes, stirring halfway through, or until granola is a beautiful golden brown. Keep a close watch as it can burn very quickly.
    • Remove from oven and let cool on cookie sheets. Store in airtight container. This mixture should keep at least 2 weeks.

      As a distance runner it's very important that I eat healthy to properly fuel my body. I like the addition of coconut oil and honey to your granola recipe, especially the honey. I consume more than my fair share of the nectar of the gods! The only thing I would change would be to add some dried fruit, cherries or cranberries.
