What is a Bellini?
The traditional Bellini is a classic cocktail that is both simple and sophisticated. It originated in Venice, Italy as a sparkling drink that combines the sweet flavors of white peach puree with crisp, effervescent Prosecco. The name was inspired by the colors used in paintings by Giovanni Bellini, a Renaissance artist.
But like all great classics, the Bellini has inspired countless variations. Just infusing it with a different fruit puree from mangos to raspberries, and apricots to strawberries, makes it the perfect cocktail blend of bubbly fun and fruity sweetness.
The Difference Between a Bellini and Mimosa
When it comes to toasting, the Bellini and Mimosa are front and center. While they may share a sparkling similarity, these two cocktails have several differences that set them apart.
The Bellini is an Italian classic, blending the subtle sweetness of white peach purée with the crisp effervescence of Prosecco. It's a subtle, more fruit-forward cocktail and a bit more elegant than a mimosa.
The Mimosa, on the other hand, is a simple cocktail with an equally delicious mix that combines equal parts of chilled orange juice with sparkling wine, traditionally Champagne. The Mimosa shines with its bright, citrusy appeal, offering a zesty kick that pairs perfectly with any brunch spread.

Ingredient Substitutions and Recipe Variations
Flexibility is the name of the game with this Strawberry Bellini recipe. Here are some fun swaps and variations to keep your Bellini game strong:
Bubbly Your Way - Not a Prosecco fan? Feel free to swap in any type of sparkling wine—Champagne for a bit of luxury, Cava for a Spanish twist, or sparkling Moscato for a sweeter sip.
Syrup Swap - If you're all about that smooth texture or just in a hurry, ditch the strawberry mixture for strawberry simple syrup. It's quick and easy without the blender cleanup.
Strawberry Peach Bellini - Mix half strawberry purée and half peach purée (or a dash of peach syrup) for a doubly delicious fruity concoction.
Strawberry Rosé Bellini - Swap out the Prosecco for sparkling Rosé for a rosy-hued Bellini that looks like sunset in a glass.
Virgin Strawberry Bellini - Switch the Prosecco for a non-alcoholic sparkling wine for a mocktail version that's just as bubbly and totally party-friendly.
Frozen Strawberry Bellini - Use frozen strawberries for a slushy version that puts a frosty twist on the classic. Totally worth the effort.
Recipe Tips
Pick the Perfect Strawberries - The secret to a sensational Bellini starts with the strawberries. Aim for ripe ones that are bursting with flavor, but steer clear of the overripe bunch to avoid a mushy mess.
Sugar? It's Optional! - If the strawberries are sweet, feel free to skip the sugar.
To Strain or Not to Strain - If you like a smoother texture strain your strawberry purée, but if you decide to skip this step, no worries—the seeds will settle at the bottom of your glass.
Prosecco Pouring 101 - When it comes to adding the Prosecco, pour slowly and with the glass tilted to avoid an overflow of bubbles. You're aiming for fizzy, not foamy.
Stirring - Fruit purée and sparkling wine only need a gentle nudge to combine. Stir too vigorously, and you'll end up with a flat cocktail.
Flavor to Your Liking - The beauty of a Bellini is in the balance. Whether you prefer a strong strawberry punch or a subtle hint of fruit, you can adjust the ratio of purée to Prosecco until it’s just right.
Serve Up Freshness - Bellinis are best enjoyed immediately. Serve them fresh to keep the Prosecco bubbly.
How to Store Leftovers
Storing a leftover Strawberry Bellini can be a bit tricky, primarily because the Prosecco in the drink will lose its fizz over time, which is a key part of its appeal. However, if you find yourself with leftover Bellini, here are a few tips on how to handle it:
Short-term Storage: If you must store it, pour the leftover Bellini into an airtight container and refrigerate. It's best to drink it within 24 hours to enjoy what's left of its bubbly nature.
Storing Components Separately: In the future, if you anticipate having leftovers, it's best to store the components separately. Keep the strawberry purée in the fridge (it can last 3-5 days) and the Prosecco, resealed with a sparkling wine stopper, in the refrigerator (best consumed within 1-3 days). This way, you can mix a fresh Bellini when you're ready to enjoy another glass.
